Coffee cherries are first processed by "floating". The floatation process involves immersing the coffee cherries in water, whereby the unripe or damaged fruit floats to the surface and is separated from the good quality fruit, which sinks to the bottom. They are then placed on drying beds for 12-15 days. The green grains are hand-picked by local women. After drying and storage, the coffee is transported to Moplaco in Gerji, Addis Ababa, and then by train to Djibouti for export.
