The final stage is drying on raised tables (so-called African beds), where the beans dry for about 10–15 days. They are regularly turned to ensure even moisture evaporation and to avoid defects.The result of the entire process is a coffee of exceptional clarity – one in which you can clearly taste the origin, variety, and growing conditions.
