This is a special coffee for a special occasion, made for anyone seeking bold, expressive flavors.Indonesia from the Gayo region defies the usual stereotypes of heavy, earthy Sumatran profiles. The cherries first undergo precise water selection to remove less ripe fruit, then ferment under anaerobic conditions. This process amplifies fruity intensity and gives the coffee a wine-like character, while maintaining a clean cup. It is a combination of Gayo tradition and controlled processing that elevates local varieties (Gayo 1, Gayo 2) to a new level. In the cup, you’ll find a thick, fruit-driven syrup. Pronounced notes of blackberry, strawberry, and wild blueberry intertwine with pomegranate juice. This is a high-intensity coffee, surprisingly juicy and full-bodied, perfect for those who look for depth and a touch of exotic wildness in a pour-over.

In the cup, you can expect the hints of praline, cherry, dried plum.Country: Costa RicaRegion: Chirripó, BruncaVarietal: CaturraFarm: Vista al ChirripóProcessing: Anaerobic NaturalAltitude: 1300 - 2000 m a.s.l.ABOUT THE FARMThis coffee comes from the Chirripó micro-region in southern Costa Rica, where the Ureña Rojas family runs their farms. It is one of the most consistently developed coffee projects in the region — the family micromill Café Rivense, founded in 2005 by Régulo Ureña and Isabel Rojas, and now operated together with their sons: Ricardo, Mario, Esteban, and Luis. The Vista al Chirripó farm sits at elevations reaching up to around 2000 meters above sea level, overlooking Costa Rica’s highest peak, Cerro Chirripó. Lots from this very farm placed 5th in the Cup of Excellence 2019, confirming it as one of the most respected terroirs in the country. The family prioritizes biodiversity, full self-sufficiency, and minimal water usage. The entire production chain — from harvesting and processing to export — is managed by the family themselves, without intermediaries.ABOUT THE COFFEEThis is an exceptional lot of Caturra, processed through anaerobic fermentation and dried in the fruit. The method enhances juicy fruit character and deep sweetness, resulting in a profile full of cherry, dried plum, and praline-like creaminess. The cup is smooth and elegant, with a long, sweet finish — ideal for filter brewing.Cherries are selectively handpicked and then placed in sealed tanks for anaerobic fermentation, where they remain in controlled, oxygen-free conditions. This process gives the coffee deeper color, intensity, and a dessert-like character. The fruit is then naturally dried to concentrate sweetness and aromatics. The result? An intense, juicy, velvety coffee with beautifully developed stone fruit acidity. Our rice paper packaging reflects the Kaizen philosophy of continuous improvement in harmony with nature. It is compostable, lined with PLA, and ensures maximum freshness while minimizing environmental impact.

He sent us samples of several coffees from China, and we chose this one… the most “coffee-like” of them all. It’s a super sweet, dense espresso with spicy notes in the background. We already have one natural from Ethiopia in our espresso lineup. But having just one is like owning a single bicycle. Technically fine… but why limit yourself? This Ethiopia is different from the one in our regular offering because there’s simply more of everything. The acidity might be higher, but the finish is longer and more complex. In the aroma, you’ll find notes of orange and flowers. It makes a seriously good shot on its own, and it also works as a solid base for milk drinks. We highly recommend tasting it side by side with our everyday Ethiopia and seeing the difference for yourself.

It’s a smooth, comforting espresso — without the caffeine rush, but with full character.  Country of origin: ColombiaRegion: CaucaFarm: TumbagaVariety: BlendProcessing method: Sugarcane DecafAltitude: 1400–2000 m a.s.l.

Kaizen - Costa Rica Marvin Barrantes Sarchimor Black Honey Espresso 250 g

Roasting date: 15.12.2025

Whole-bean specialty coffee from Costa Rica, roasted by the Polish roastery Kaizen. Medium roast, ideal for espresso machines and moka pots. In the cup, you’ll find tasting notes of raspberry, blackcurrant, caramel.Country: Costa RicaRegion: West ValleyFarm: Reina ElizabethVarietal: SarchimorProcessing: Black honeyAltitude: 1450 - 1550 m n.p.m.About the coffee from the producerThis is our second year in a row working with coffee from Marvin Barrantes, whom we personally visited in 2024. This time, we chose the Sarchimor variety. The coffee underwent Black Honey processing, in which cherries are selectively picked and then depulped while leaving the mucilage layer intact. The beans are dried on African beds for about 20 days, regularly turned and moved to maintain maximum cleanliness of the profile and ensure even drying. The result is an espresso with deep sweetness and high body. In the cup you’ll find notes of red fruits and caramel sweetness. The texture is velvety, the acidity lively yet harmoniously balanced—creating a bold, sweet-fruity shot that works beautifully both on its own and with milk.About the farmThe mill began operating in 2012 with a small depulping machine and a few African drying beds, where all the coffee was 100% sun-dried. The first single varieties Marvin experimented with were Caturra and Millennium. The mill, named “Reina Elizabeth,” pays tribute to the farm’s previous owner, Elisa Alfaro Hidalgo (1928–2016), who was Marvin’s mother. Doña Elisa had strikingly blue eyes, which led locals in San Luis to claim that only a queen could have such eyes—hence the nickname “Reina Elizabeth.” In addition to her remarkable eyes, her kindness and the farm’s specialty coffee were also truly royal.

The Barn - Colombia Black Condor Washed Espresso 250 g

Manufacturer: THE BARN

Roasting date: 02.08.2026

Whole-bean specialty coffee from Colombia, roasted by The Barn roasting brand. Dark roast, perfect for espresso machines and moka pots. The flavour of the brew resembles candid orange and cocoa.  Origin: ColombiaRegion: TolimaFarm: Black Condor ProjectVariety: Caturra CastilloProcessing: WashedCupping score: 86 / 100 Altitude: 1800 m a. s. l.THE CUPThe profile is typically Colombian, with superb clarity and definition. In the cup, expect notes of candied orange, cacao, and honey. Acidity is well-balanced but does not dominate, with lasting richness reminiscent of sweet dried fruit: one of those espressos we could drink all day.ABOUT THE FARMThe area of Gaitania, Tolima, was historically impacted by conflict. In 2019, our export partners Forest Coffee - founded by the Bayter family from El Vergel - and local coffee grower Emmanuel joined forces to establish the Black Condor Project, providing support to farmers in Gaitania affected by guerrilla warfare. The projects conducts regular workshops with producers to emphasise quality and cover processes such as fermentation, drying, and cupping of their own coffees. Their coffee is processed at a mill in Gaitania, which now serves over 15 villages across Gaitania.THE PROCESSThe process begins with embracing mucilage for 24 hours. The beans then rest on a drying patio, fostering a harmonious profile. After a 15 to 25-day drying period, they undergo a stabilisation process before proceeding to the milling process, which results in a consistent profile.ROASTERS OPINIONIn 2019, the Black Condor Project was established to support farmers affected by the violence that had swept Colombia. Across 15 villages, assistance with growing, processing, and quality control has helped lift coffee quality. This washed lot shows everything they have achieved.

Thanks to this approach, a “regional blend” is not random mixing, but coffee unified under one processing protocol, in one place and under one supervision.Forest Coffee develops this project under the “Innovation” concept and openly communicates its goal: consistency, transparency, and real added value for producers.ABOUT THE COFFEECastillo, Caturra, Colombia. In practice: a solid foundation that carries sweetness and allows vanilla to shine without the flavor losing balance. This combination of varieties maintains structure in the cup — which means the processing can be intensive while the coffee still tastes like coffee, not perfume.First comes a 24-hour pre-fermentation of whole cherries. Then depulping and washing. Next, 96 hours of anaerobic fermentation in sealed tanks with the addition of natural vanilla aroma. Finally, mechanical drying (3–4 days) and 30 days of stabilization in GrainPro to allow the flavor to settle and remain consistent across future batches.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseMethod:Pour the water in five equal stages (e.g., 5 × 60 g), every 30 seconds.Allow the water to fully drain through the coffee between pours. If the flow is too slow or too fast, adjust the grind size accordingly.Use soft, filtered water.

Thanks to this, a “regional blend” is not a random mix, but a coffee unified under one processing protocol, in one place, under one supervision.Forest Coffee builds this project under the “Innovation” concept and openly states its goal: consistency, transparency, and real added value for producers.ABOUT THE COFFEEPink Bourbon is a variety that can be elegant and clean. Its natural sweetness and fruit-floral base handle intensive fermentation well, without creating heaviness in the cup. As a result, the banana aroma does not overpower the coffee’s flavor — it enhances and defines its character.First, the cherries undergo 48 hours of fermentation in sealed bags. They are then depulped, with the beans left covered in a layer of mucilage. The next stage is co-fermentation with yeast and natural banana aromas, lasting about five days. Finally, the beans are dried to the target moisture level.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseMethod:Pour the water in five equal stages (e.g., 5 × 60 g), every 30 seconds. The water should fully drain through the coffee between pours. If the flow is too slow or too fast, adjust the grind size accordingly.Use soft, filtered water for best results.

Sweet like maple syrup, with notes of malt and soft yellow fruit. A touch of citric acidity and smooth texture make this coffee delicious through milk.ABOUT THE FARMFinca Santa Clara is located in the fertile Antigua valley, Guatemala. Surrounded by three volcanos, it has been in operation since 1930. Our partner Ricardo Zelaya is the fourth generation of his family to farm here. He introduced a dedicated approach to quality, winning the precious Cup of Excellence award in 2001. On the slopes of the Volcán de Agua, the estate climbs to an elevation of up to 2050m, with the Caturra and Bourbon in our lot grown between 1650 and 1700m. A quarter of the estate remains preserved forest, encouraging the biodiversity in which coffee thrives.THE PROCESSFor this lot, Ricardo used a traditional washed method. The freshly harvested cherries are first pulped to remove the outer skin, then fermented. After washing, the beans are dried on African beds inside a specially designed greenhouse. Our lot took around 21 days to dry, a slow process encouraging balance and complexity.ROASTERS OPINIONIntroducing our new Winter Coffee. From our partner Ricardo Zelaya, the smooth sweetness of this lot really stood out: a perfect daily espresso or easy-drinking filter coffee.

Lightly roasted, it works perfectly for all pour-over brewing methods—from dripper, Chemex, AeroPress, French Press, and other alternative methods, all the way to automatic drip machines! In the flavor profile you can sense notes such as milk chocolate and plumOrigin: GwatemalaRegion: HuehuetenangoProcessing: WashedVariety: Caturra, CatuaiAltitude: 1600 m n. p. m.Farm: Andres RamirezTHE CUPThis lot offers a smooth, easy drinking profile. The slow fermentation during processing creates depth and character, bringing notes of milk chocolate, pecan, and plum. As it cools, expect dried fruit and a touch of citrus, with plenty of sweetness and great balance.ABOUT THE FARMAndres is a first generation coffee farmer but, like many in Huehuetenango, his coffee is a family endeavour. In the town of Concepcion Huista, he and his wife have devoted themselves to learning everything about processing coffee from Yich Kalnahl: their 1.2 hectare finca. Surrounded by dense forest and rolling mountains, banana plants and indigenous trees provide great shade. With temperatures ranging from 13-26 degrees celsius, the finca benefits from a cooler microclimate that allows coffee cherries to slowly develop their flavour.THE PROCESSAndres’ wife takes care of processing. After harvest, the coffee is de-pulped, removing the cherry. The coffee is then placed in a tank and submerged in water to ferment for 32 hours. This relatively slow fermentation contributes to the complex profile. The fermented coffee is then washed thoroughly and placed on the patio to dry. It stays in the sun for about 8 hours per day for 7 days, and the family makes sure to turn it frequently to ensure even drying.
