When my season for drinking coffees processed other than washed comes around, it is the Chacon family that shows how to do it best. We have had coffees from them in Alma Negra, Perla Negra, and Yellow Diamond processes – these are different "variations" of theirs on honey and natural processing – and all of them are invariably super clean in flavor. This time is no different, absolutely flawless.ABOUT THE PROCESSPerla Negra is a processing method that goes as follows: after harvesting, the cherries are transferred to the mill for grading, where only the ripest ones are selected. Then, they are moved to the greenhouse patio for drying. During the first week, the cherries are piled on top of each other in a thick layer for aerobic fermentation. After this first week, the coffee is spread across the patio, forming a thin layer until the drying process is complete. Delicious!Store in a cool, dry place.

How did it happen? Hand-picked cherries – nothing unusual. But then – SHOCK. Thermal! The cherries were submerged in water at a temperature of 180°F (80°C) for 30 to 60 seconds. Next, the fruits were washed and underwent ozonation. The seeds were extracted, and the juicy experimenting began. Juice was squeezed from the skins of still-fresh cascara. The juice was mixed with the beans in fermentation barrels. With the help of the necessary microorganisms, the beans underwent lactic fermentation for 220 hours. After that, just 20 days of drying, and there you have it.Reading this description, you might think it would turn into pickled cucumbers, or at least kombucha. Nothing of the sort. The selected cherries are then placed in sealed, shaded barrels, where they undergo a specialized, 72-hour, dry anaerobic fermentation. By removing oxygen and maintaining strict temperature regulations, this process allows the coffee to develop an incredibly clean acidity and a creamy texture, while preserving the distinctive characteristics of its original terroir.After fermentation, the coffee is carefully removed from the barrels and sorted by hand once again to ensure that only the finest cherries move on to the drying stage. Over the course of 33 days, the beans are dried on raised drying beds that provide optimal airflow.
