Although it will not put you on your feet, it is a ticking fruit bomb. Decaf coffees have long had their place on our shelves and in our hearts, but this one quickly turned our habits upside down. From the very first encounter, it delivered a juicy punch straight to the taste buds. Is this really a decaf? This fruity? This expressive? We could not walk past it indifferently, nor resist sharing what the renowned Nogales farm is doing with caffeine free coffee. Nogales is a family run farm led today by Oscar Hernandez, a third generation farmer from Huila, who has been breaking coffee conventions for years, a mindset confirmed by a Cup of Excellence win in 2006.For the sensory description, we limited ourselves to three descriptors, although the truth is that the profile could easily hold almost an entire palette of Mamba like flavours. The cup is complex and intense, hard to confuse with anything else. A pronounced sweetness is supported by well balanced acidity and a round body. If you enjoy fruit forward profiles, avoid caffeine and do not want to give up either, these beans are made for you.The processing begins in a classic way. Hand harvesting, flotation to separate only ripe cherries, followed by 24 hours of fermentation and thorough washing. The coffee is then gently dried on raised beds until it reaches the desired moisture level.Only then does the decaffeination begin. First, the beans are immersed for four hours in hot water at 40°C, allowing the caffeine to be extracted. This step is repeated twice. Next, a natural must is used, an extract obtained from the husk and pulp of the coffee cherry. The entire process relies solely on components derived from the coffee itself. Finally, the beans are washed once more and dried again, preserving clarity in the cup and the coffee’s natural sweetness.

We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. At some point his mom’s little SUV simply couldn’t make it any further, so Hellen drove down in her big pickup truck and towed us the rest of the way up.First she fed us, then she showed us the farm and told us its story. After the walk she prepared a cupping where she presented eight of her coffees. A cupping in the kitchen while rice and beans are cooking right next to you? Why not.The coffees were phenomenal. And that Geisha? That’s the coffee that’s been appearing in my dreams ever since I came back from Costa Rica. Lots of tropical fruit, but without the kind of fermentation often associated with coffees from this country. Notes of banana and pineapple, plenty of red, sweet wine, currants, and everything beautifully structured and right where it should be.I’m very happy that we’re also presenting such an exceptional coffee as an espresso. It’s the essence of that trip in a cup: sweetness, tropical fruit, bright acidity supported by deep sweetness. One of the warmest memories from that journey returns every time we roast and brew this coffee. I invite you to join me on this trip.

This is quite rare in a country where most coffees are typically blends from many small farms.Ngoma CWS (co-owned by MIG Coffee and CBC) chose an anaerobic natural process to further highlight the potential of this lot. The cherries fermented for about 12 days (around 300 hours) under controlled conditions and were then slowly dried on raised beds for 35 days until reaching 12% moisture.The result? In Burundi, coffee is typically grown on micro-farms, often in small plots next to family homes.The coffee cherries arrive at the station on the day of harvest, where they undergo water flotation sorting, hand selection, and classic washed processing. Fermentation in clean water lasts 10–12 hours, after which the coffee is thoroughly washed and dried on raised beds for 2–3 weeks. Each lot remains fully traceable.The result in the cup is a clean, elegant profile typical of high-altitude Burundi coffees: red currant, vanilla, and black tea.A sweet, clear coffee with a tea-like structure and juicy acidity. From the very beginning, Bridazul has acted as a link between farmers and roasters. Producers deliver their coffee cherries here, while the Bridazul team handles processing, quality control, and matching coffees with the right buyers without ever taking ownership of the raw product.This allows small farmers to focus on cultivation, while buyers gain access to unique microlots that might otherwise never leave the region.What sets this place apart is its exceptionally advanced approach to fermentation and drying. Years of collecting data, testing temperatures, fermentation times, and slow drying techniques have given Bridazul a far wider range of processing methods than most standard mills in the region. Processes here are designed with a specific flavor profile in mind rather than maximum efficiency.Little Red Riding Hood is an example of this approach. In 2020, Tim Willems from Bridazul noticed that several experimental batches were too small to export individually. Instead of discarding them, they were combined into a cohesive whole. This decision led to the creation of the Bridazul Blends line, and with it, this particular composition.ABOUT THE COFFEEThe coffee comes from several farms around Dipilto and Mozonte, including El Avion, Los Pirineos, and La Bendición, located at elevations between 1400 and 1650 meters above sea level. The blend features the Caturra and Catuai varieties and undergoes Carbonic Maceration fermentation.The cherries ferment briefly in small batches under controlled conditions to highlight fresh, fruit-forward notes. They are then dried on shaded African beds, spread in thin layers to preserve fruit intensity and maintain a clean, elegant cup structure.Bridazul and Little Red Riding Hood demonstrate how technology, experience, and collaboration with local farmers can create a coffee that is not a random blend but a thoughtfully crafted story captured in a cup.

Moreover, there are several water sources in the region that supply much of the nearby city. The lush, natural ecosystem creates excellent conditions for growing coffee trees while also contributing to the fertility and stability of the soil in these lands.This particular lot is a blend of two botanical varieties from several small producers, who cultivate and process coffee on small, multi-hectare plantations.ABOUT COFFEE PROCESSING ON THE FARMThe Caturra and Pache varieties are hand-picked and processed at small, producer-owned stations. The beans are separated from the cherries using small, often manual depulpers and then fermented in tanks for about 36 hours. After washing, the beans are dried in specially built wooden structures, covered with tarps to ensure a more controlled process, without direct sunlight exposure.ROASTER'S OPINIONI first roasted El Diamante around 2016, alongside several other washed microlots from the highlands of this northern part of the country. And I was hooked. A beautifully clean and elegant cup, full of clear notes, distinct fruitiness, and mature, juicy acidity.

You could say it has built a bigger international career than many MBA graduates.The cherries of the Parainema botanical variety go through water selection. Those that float to the surface are unripe and do not continue to the next stage of processing. They are then fermented for 24 hours, washed, and dried for about two weeks. Precision at every stage ensures that what you taste in the cup is not chance, but a series of deliberate decisions, from the very first sip to the last drop.
