The entire coffee operation is led by Mr. Tian Cai, manager of the Yunnan Coffee Traders (YCT) farms, while its daily management is handled by his relative, Mr. Tang. This is a family team belonging to a small group of farmers from the Gui Ben region. The coffee cherries come from both their own crops and from neighboring smallholders. The cherries are spread in a thin layer on raised beds for two to three days, after which they are raked and dried for another 25 days. Only then do they move on to further processing, sorting, and, once prepared this way, await shipment to warehouses in Europe. We roasted them relatively light for espresso, which gave them a long aftertaste. In the background lurks a note known from Asian coffees, but for me, yellow sweet plum takes center stage here. The farm covers an area of 200 hectares, of which 45 hectares are dedicated to coffee cultivation – the remainder forms a natural protected area. The Cabrera family has been connected to this land since the early 20th century, and coffee cultivation began in the 1940s. Eduardo Cabrera, the current owner, invested in building his own wet mill on the farm, which allowed him to take full control over processing quality. The coffee grows in the shade of Abyssinian banana trees, cultivated using organic methods by many local smallholder farmers without synthetic fertilizers. Ripe cherries are hand-picked by seasonal workers, and after processing, they are sun-dried for 12–16 days until reaching the ideal moisture content. Kumquat and lemon give it a lively, fresh acidity, while dark oolong provides the brew with a structure and depth not always expected from a washed Ethiopian coffee. Tolima regularly appears in the Cup of Excellence, and for good reason – the region delivers coffees with a distinct character and a clean profile. The coffee is decaffeinated using the sugarcane ethyl acetate method – not chemically, but using a natural solvent derived from sugarcane. The green beans enter a steam chamber, are then soaked in spring water, and spend 8 hours in direct contact with ethyl acetate, which dissolves the caffeine while leaving the rest untouched. The result: coffee that tastes like coffee.ROASTER'S OPINIONEl Indio is a decaf that doesn't act like a decaf. Lime acidity, red fruits, and a chocolate finish – everything is in place, only caffeine is missing.
