Antonio is the third generation of his family to farm here, and began by planting grains and pulses. Slowly but surely, Antonio increased the number of trees and the production capacity of La Colina. Nine years ago, Antonio built his own processing facilities, and with his focus on quality rather than quantity, he has achieved excellent rankings in the Guatemala Cup of Excellence competition. The coffee grows within a beautiful landscape of oak, cypress, and pine. The farm benefits from multiple streams, with fresh water for irrigation and processing. Only one quarter of his farm is planted with coffee, while the rest remains native forest, certified by the National Institution of Protection of Forests.ABOUT THE PROCESSUsing spring water from the farm, this lot was fully washed, then sun-dried on patios. The terroir, climate, and harvest cycles all contribute to the quality of coffee produced here.ABOUT THE PROCESSThe coffee is picked ripe and pulped the same day, before open fermentation in tanks for 12–36 hours. The coffee is then washed clean of its mucilage before drying on patios. Once dry, the beans are decaffeinated through the sugarcane or Ethyl Acetate process. A solution of water and Ethyl Acetate - derived from Colombian sugarcane crops - is used to gently extract caffeine while maintaining the important flavour compounds in the coffee. Rather than immediately harvesting mature cherries, cherries are dried while still attached to the branch. Dry conditions at the time of harvest mean that fungus or other defects can be avoided. Coffee grows between 1,650 and 1,700 metres above sea level on the slopes of Volcán de Agua, where fertile volcanic soils and a cool mountain climate provide ideal conditions for exceptional Arabica coffee. Around a quarter of the estate is preserved as native forest, protecting biodiversity, natural water sources and the healthy ecosystem that supports both the farm and its coffee.ABOUT THE PROCESSRicardo prepares this lot using a traditional washed process, chosen to highlight the clarity and balance of the coffee. After harvest, the cherries are pulped before undergoing fermentation to remove the remaining fruit. The beans are then carefully washed and transferred to African drying beds inside purpose-built greenhouses, where they dry slowly over approximately 21 days.
