"Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. The next stage is an eight-day anaerobic fermentation in airtight steel tanks, which deepens the sweetness, texture, and complexity of the sensory profile.After fermentation, the coffee is dried for 15–20 days in parabolic dryers, which ensures uniform airflow. The final stage is manual selection and a 15-day stabilization period in jute bags.In the cup, the coffee presents an elegant and refined character with notes of guava, sweet cherry, and muscovado sugar, supported by a creamy texture and a long, sweet finish. It is characterized by a complex flavor profile, where one can often find notes of tropical fruits, citrus, and florals, complemented by a delicate sweetness. The whole profile is completed by a bright, vibrant acidity and a clean finish. Due to its uniqueness and rarity on the market, this variety is frequently used in barista competitions.THE PROCESS The coffee cherries are hand-picked and carefully selected. They are then subjected to a washing process, during which floating cherries are removed from the surface of the water. The next stage is a 90-hour fermentation in hermetically sealed barrels.
