COFFEE OF THE MONTH
COFFEE OF THE MONTH: Kafar - Ethiopia Chelchele Natural Filter 250 g

Manufacturer: KAFAR

Roasting date: 12.08.2026

Whole-bean specialty coffee from Ethiopia, roasted by Kafar roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of mandarin, milk chocolate and spices.Origin: EthiopiaRegion: Chelchele, GedebProducent: Tadesse Desta Business GroupProcessing: NaturalVariety: HeirloomAltitude: 1900-2100 m a.s.l.Cupping score: 88,25 / 100 ABOUT THE REGION AND FARMThe Gedeb region in southern Ethiopia is among the most appreciated specialty coffee growing areas. Situated at an altitude of 1,900–2,100 meters above sea level, the farms benefit from a cooler climate, fertile soils, and large temperature differences between day and night. Such conditions favor the slow ripening of the cherries, allowing the beans to gradually develop their natural potential.Coffee trees grow among traditional, diverse crops that provide natural shade. The cherries are harvested by hand, and only fully ripe cherries are selected for further processing. Subsequently, they are processed using the natural method on raised beds, where they require regular turning and careful monitoring throughout the entire drying period. This process allows the origin's character to be preserved and the full potential of the bean to be brought out.ABOUT THE COFFEENotes of mandarin, milk chocolate, and spices dominate in the cup. Citrus accents combine with a chocolate character, while spicy notes complete the whole, creating a cohesive and harmonious flavor profile. This is a coffee that demonstrates the classic character of high-quality coffees from southern Ethiopia, in a version crafted specifically for pour-over brewing methods.COFFEE OF THE MONTHEvery month, we select unique beans for you in three reveals: Espresso of the Month, Filter of the Month, and - starting now - Turbo Filter. This is our signature selection of coffees that we particularly want to show and recommend to you in a given month. Espresso and Filter of the Month are carefully selected specialty coffees that will work great every day. Turbo Filter, already known from our cafes, is an option for those who want to reach even higher: a limited and slightly wilder coffee from the Royal Beans selection, distinguished by its unique taste, origin, or processing method. We thoroughly test each of them using various brewing methods, prepare recommended recipes, and tell the story of its beans. Bracia Ziółkowscy - Indonesia Canpehora Kamandang Anaerobic Natural Filter 250 g

Manufacturer: BRACIA ZIÓŁKOWSCY

Roasting date: 11.08.2026

Whole-bean specialty coffee from Indonesia, roasted by Bracia Ziółkowscy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew resembles dark chocolate, nuts, caramel and orange zest.Country: IndonesiaRegion: Sepakung, Central Java Farm: Vins & BedjoVarietal: TugusariSpecies: Canephora (robusta)Altitude: 1100 m a.s.l.Processing: Anaerobic naturalABOUT THE FARMVins and Bedjo are two enthusiasts who persistently experiment in search of the perfect Canephora flavor. Their annual production is currently very small – around 2 tons of green coffee – but in their case, "every bean matters." There is no room here for cheap, container-scale production, so every coffee cherry cultivated by them is treated with due attention. The farm is pictorially located on the slopes of the Telomoyo volcano, surrounded by dense jungle. Once every four years, the eruption of the nearby Merapi volcano covers the entire region in volcanic ash, which is incredibly fertile and promotes the development of sweetness and spicy characteristics in the coffee.ABOUT THE PROCESSINGExperiments with Canephora are particularly important to them, which naturally caught the attention of the Brothers (fine robusta neophytes). This specific lot underwent their signature process – quadruple anaerobic fermentation. The fruits spend five days in each of four consecutive tanks, being cleaned of fermentation byproducts in between. This is Vins and Bedjo's proven method to "clean up" robusta, giving it a clear character and a great, mild profile.ABOUT THE SPECIESWe are glad that you are exploring coffea canephora, often called robusta, together with us. For years, this species was mainly associated with cheap blends, but well-cultivated canephora can be intense, sweet, creamy, and surprisingly complex. That is precisely why it is appearing in our selection — to show that the world of coffee is broader than arabica alone. However, it is worth brewing it a bit differently. Canephora is more intense and extractable, which is why we recommend lower temperatures: 86–89°C (it is best to start at 88°C). Water with lower mineralization — around 70 ppm — also works well. You can simply mix your water with distilled water in a 1:1 ratio or use low-mineral water, such as Żywiec Zdrój.Do not be surprised if it tastes different from the coffee you know. That is precisely the point.ROASTER'S OPINIONHere is what we love fine robustas for. A deep malty profile with notes of cocoa and nuts, a clean and clear brew, a heavy, pleasant body, and virtually zero acidity. The ideal everyday bean.Store in a cool and dry place.

Bracia Ziółkowscy - Indonesia Si Unyil Manis Liberica Anaerobic Natural Filter 150 g

Manufacturer: BRACIA ZIÓŁKOWSCY

Roasting date: 11.08.2026

Whole-bean specialty coffee from Indonesia, roasted by Bracia Ziółkowscy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew resembles sage, licorice and grapes.Origin: IndonesiaRegion: Sumedang, Zachodnia JawaFarm: Rainaldi, Pundit CoffeeSpecies: LibericaVariety: ExcelsaAltitude: 800 m a.s.l.Processing: Anaerobic naturalABOUT THE SPECIES AND VARIETYMaybe you've already noticed – the Brothers (Bracia Ziółkowscy) are collecting more coffee species. Arabica, canephora, liberica. But here we have to throw our hands up and say – it's a matter of debate. Excelsa was discovered in 1903 and since then was considered a separate species. In 2006, its official classification was changed to a variety of liberica. However, many farmers and researchers dispute this decision, pointing to many characteristics unique to excelsa. We won't resolve this dispute. However, we can say with great certainty that, like liberica, excelsa has a unique flavor profile not found in other species. Sage, licorice, exceptionally high sweetness. You can't miss it. Very to the point – the name Si Unyil Manis translates to "the sweet little one".ABOUT THE CULTIVATIONIn coffee, you often hear claims about sustainable and biodiverse farming. Often these are empty words. Meanwhile, excelsa is perfect for precisely these conditions. It gladly grows in the shade of other trees, among many plant species. Si Unyil Manis is cultivated in an equatorial forest, alongside banana trees, tobacco, and tall shade trees. Compared to the nearby oil palm plantations, this is an incredibly vibrant ecosystem.ABOUT THE PROCESSINGThe producer of this coffee, Rainaldi, specializes in excelsa like few others. For years, he has been searching for processing methods that allow full expression of this species' (variety's?) flavor notes. In this case, the full name of the process is "anaerobic thermo soaked natural". In practice, this means that after harvesting, the fruits were given a warm bath, from which they went into fermentation tanks. Further processing is classic natural drying. The warm bath helps eliminate some of the naturally occurring bacteria and fermenting yeast. This results in a more stable and repeatable anaerobic process.ROASTER'S OPINIONA mystery coffee. Is this another – now the fourth species of coffee plant in our offer? Maybe yes, maybe no. But we guarantee that while drinking it, you won't be puzzling over it, because the coffee is spectacular even without mysteries. We were looking for a promotional slogan for this coffee. So far, the best we came up with is: "if you thought geisha was cool, it's clear you haven't tried excelsa yet." And watch out – we aren't joking at all.ROYAL BEANSWhat’s behind the name Royal Beans? If Speciality beans are the pinnacle of coffee, our Royal Beans reach the Himalayas! In this series, we present the very top of the coffee pyramid, the crème de la crème, as precious as crown jewels. Anaerobic, Gesha, Nanolot, Lychee – what does it mean to go beyond the ordinary? – Royal Beans is a selection of coffees chosen by us from various roasters – they share exceptional flavor, limited production, unique processing methods, and the highest quality. A treat for coffee connoisseurs (and those aspiring to be)!Store in a dry and cool place.

Whole-bean specialty coffee from Burundi, roasted by Bracia Ziółkowscy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew resembles citrus, cherry and caramel.Country: BurundiRegion: Munyinya Hill, Gitega provinceFarm: Long Miles Coffee, 232 rolnikówVarietal: BourbonAltitude: 1700-2100 m a.s.l.Processing: WashedABOUT THE FARMLong Miles Coffee is one of the most interesting coffee projects in Burundi. It was founded in 2011 by Ben and Kristy Carlson, who recognized both the huge potential of Burundian coffees and the challenges faced by local farmers following the privatization of the coffee sector. Their goal was to create a collaboration model that would allow farmers to produce better coffee and receive fairer compensation, while providing roasteries around the world with access to exceptional and fully traceable lots.Today, Long Miles works with thousands of smallholder producers and operates its own washing stations, including Bukeye, Heza, and Giku. Every batch of coffee can be traced back not only to a specific station, but often to the specific hill where the cherries were grown. Thanks to this, Long Miles has become one of the pioneers in building transparency and traceability for Burundian coffee. The project's philosophy is based on a simple premise: good coffee starts with people. That is why Long Miles invests not only in infrastructure and processing quality, but also in farmer training, local community development, and long-term relationships with producers. The result is coffees that regularly feature in the offerings of the world's most respected specialty roasteries and have been building Burundi's reputation as one of Africa's most exciting origins for years.ROASTER'S OPINIONCoffees from Burundi are our non-guilty pleasure. We'll take them in the morning, in the afternoon, even early in the evening. Acidity and all the best East Africa has to offer.Store in a cool, dry place.

HAYB - Burundi Mubuga Natural Espresso 250 g

Whole-bean specialty coffee from Burundi roasted at HAYB. Medium roast, perfect for espresso machines and moka pots.  In the cup, you can expect hints of vanilla, milk chocolate and cherry.Country of origin: BurundiRegion: Ngozi Variety: BourbonProcessing method: NaturalCupping score: 86 / 100Altitude: 1660 m a.s.l.As if on cueThis is a coffee made at the special request of our head roaster. When Rafał joined the team and sat down with us for his first cupping, he blurted out right away: "Hey, I think you've never had a coffee from Burundi, and I like them so much!" We had, but a long time ago! So we decided to make Rafał's life a little nicer, ordered samples, and chose this (and one more!) great lot.Located in Ngozi Province, the Mubuga processing station collaborates with over 1,900 local farmers who deliver their carefully selected harvests here every year. This place stands out for its impressive technical infrastructure created for the precise processing of only the finest, fully ripe cherries. The station's facilities include as many as 12 fermentation tanks, 3 soaking tanks, over 300 drying beds, and 4 specialized tables for quality sorting.Harvesting in this region usually lasts from April to June, but this coffee's journey to your cup only begins then. Burundi is a completely landlocked country – before these exceptional beans head out into the world and reach our roastery, they must travel an extremely long, demanding, and complex route.Store in a cool and dry place.

It brings a tear to the eye! Willy is a great guy, full of passion, faith, and energy for testing new farming methods. This season, we have two coffees from him from two different lots of his farm: Murundo comes first, and we have Mahembe up our sleeve for you.Willy experimented here with anaerobic fermentation. What is this "anaerobic" thing anyway? In this process, coffee ferments in an oxygen-free environment – in this case, it lasted for 72 hours. Prolonged fermentation adds a lot of sweetness and a characteristic "funk" to the coffee. It's easy to overdo the latter, but Willy keeps an eye on everything, so you won't find any aggressive, lemony, or vinegary notes in the cup. The coffee is clean, elegant, and leaves a very long, pleasant finish!Store in a cool, dry place.

HAYB - Costa Rica Hellen Mora Natural Espresso 250 g

Manufacturer: HAYB

Roasting date: 03.07.2026

Whole-bean specialty coffee from Costa Rica roasted at HAYB. Dark roast, perfect for espresso machines and moka pots.  In the cup, you can expect hints of milk chocolate, dried fig and raspberry.Country of origin: Costa RicaRegion: TarrazuVariety: CaturraProcessing method: NaturalCupping score: 87 / 100Altitude: 1800-1900 m a.s.l.Natural revolutionYou have already had the opportunity to try a Geisha roasted for espresso from this female farmer – now it is time for Caturra. A sweet shot with notes of milk chocolate, but also plenty of flavor reminiscent of figs and raspberries. Although Caturra was born in Brazil, it made a real career in Colombia, and later precisely in Costa Rica. According to World Coffee Research and Perfect Daily Grind, it is an absolute classic and a benchmark against which other modern botanical varieties are evaluated. What is worth knowing about it?Compact growth: Caturra possesses a dwarfism gene. The shrubs are short and stocky, which allows farmers to plant them more densely and makes harvesting the cherries much easier.A demanding patient: The price for high yield is poor health. Caturra is extremely susceptible to coffee leaf rust (roya) and pests, meaning it requires a great deal of attention, knowledge, and care from the farmer.Cup profile: Grown at the right altitude, it rewards you with brilliant quality. Expect a multi-dimensional, vibrant, and clean citric acidity, a medium body, and a distinct sweetness with notes of chocolate, caramel, and juicy fruits. No genetic modifications in a laboratory – a pure, natural revolution that changed the map of the specialty coffee world. Enjoy!Store in a cold and dry space.

The brew resembles the flavour of donut with rose.Country: Indonesia / ColombiaRegion: Sumatra / HuilaFarm: Simalem Specialty Coffee / AmberaProcessing: Wet-Hulled / Co-fermented WashedAltitude: 1600 / 1700 m a.s.l.Variety: Catimor / Pink BourbonCupping score: 87 / 100ABOUT THE COFFEEBanger Brew Pączek z Różą (Rose Donut) is a blend of coffees from Indonesia and Colombia, combining wet-hulled processing and co-fermentation with rose water, roasted for filter brewing. Floral, sweet, and a bit surprising – exactly how Banger Brew should work. The Indonesian base provides sweetness and a full body, characteristic of wet-hulled coffees, while the Colombian co-ferment with rose water does exactly what the name suggests: turns your batch brew into a liquid rose-filled donut! Clean, smooth, and exceptionally drinkable in large quantities. It works best in a batch brew, where the jammy, floral character has room to spread its wings without excessive acidity.ROASTER'S OPINIONBanger Brew Pączek z Różą is a coffee that makes people stop and ask in surprise, "what is this?!". The co-fermentation with rose water is noticeable, yet subtle – floral, but not perfumy, sweet, but not over the top. The wet-hulled Indonesian base provides a fuller body and makes the blend extremely drinkable. A batch brew with personality, but still slightly nonchalant.V60 RECIPEwater temperature: 92 degrees Celsius, 300 g water, 20 g coffee, grind size 7.2 (Fellow Ode II)Pre-infusion 75 g water pouring: 0-0:10,150 g water pouring: 0:30-0:40,225 g water pouring: 1:00-1:10,300 g water pouring: 1:30-1:40. All the water should finish drawdown around 2:20 - 2:30.Store in a cool and dry place.

As he says himself, he "inherited" the profession of a producer from his father. He completed courses in coffee production at the National Learning Service (SENA), and nearly ten years ago he established his own plantation. In addition to Caturra, Don Lisandro also cultivates Gesha and Pink Bourbon varieties.Don Lisandro owns a five-hectare farm, 4.5 hectares of which are dedicated to coffee crops. The plantation is located on soil typical of this region, which is a combination of volcanic and sandy-loam substrate.Only deep red, ripe cherries are harvested. In the afternoon, the pulp is removed from them, and they are then sorted using a zaranda – a type of screen used to separate impurities from the coffee. The beans later ferment in open tanks for 18–26 hours and are rinsed three times. Finally, they go to parabolic dryers, where they dry for 12–20 days, depending on weather conditions.Store in a cool and dry place.
