Although it will not put you on your feet, it is a ticking fruit bomb. Decaf coffees have long had their place on our shelves and in our hearts, but this one quickly turned our habits upside down. From the very first encounter, it delivered a juicy punch straight to the taste buds. Is this really a decaf? This fruity? This expressive? We could not walk past it indifferently, nor resist sharing what the renowned Nogales farm is doing with caffeine free coffee. Nogales is a family run farm led today by Oscar Hernandez, a third generation farmer from Huila, who has been breaking coffee conventions for years, a mindset confirmed by a Cup of Excellence win in 2006.For the sensory description, we limited ourselves to three descriptors, although the truth is that the profile could easily hold almost an entire palette of Mamba like flavours. The cup is complex and intense, hard to confuse with anything else. A pronounced sweetness is supported by well balanced acidity and a round body. If you enjoy fruit forward profiles, avoid caffeine and do not want to give up either, these beans are made for you.The processing begins in a classic way. Hand harvesting, flotation to separate only ripe cherries, followed by 24 hours of fermentation and thorough washing. The coffee is then gently dried on raised beds until it reaches the desired moisture level.Only then does the decaffeination begin. First, the beans are immersed for four hours in hot water at 40°C, allowing the caffeine to be extracted. This step is repeated twice. Next, a natural must is used, an extract obtained from the husk and pulp of the coffee cherry. The entire process relies solely on components derived from the coffee itself. Finally, the beans are washed once more and dried again, preserving clarity in the cup and the coffee’s natural sweetness.

Several years ago, these producers were dislocated from their homes and land because of a natural disaster, and they have rebuilt their lives and farms with a new focus on coffee. Unlike the vast majority of other Sumatran coffee receiving and processing centers, this mill is producing Washed coffees, as well as Naturals. The most common varieties grown in Sumatra, which are Ateng, Bor Bor, Catimor, and Timor hybrids. Aceh, in northern Sumatra, is an incredible region for coffee production. The average farm is one hectare, 80% of producers within northern Sumatra are women, and 95% of producers are smallholders. The region is diverse, geographically speaking. It is surrounded by beaches with a swampy inland, and the Barisan Mountains make up the inner two-thirds of the area. Coffee is grown on this volcanic mountain amongst the rainforest. One of the notable features of this area is Lake Taboa, the largest volcanic lake in the world.THE PROCESSHistorically, Indonesian coffee producers have implemented the wet hull method but recent years we have witnessed a shift towards modern specialty techniques which deliver exciting new profiles. His father was a Guji legend: a producer and a coffee trader who built the very first washing station in the Bule Hora community in Guji, in the early 00’s. In the meantime, unfortunately, he went bankrupt losing all of his growing lands. Tagel promised himself to redeem the plots that had belonged to his father and years later he pulled it off! Then, in 2018, when the government made it easier for producers to export by liberalizing legislation, he founded Olkai.Hambela Goro works with 460 smallholder producers that grow 74110 varietal at an impressive altitude of 2300 masl. Most of them own literally only hundreds of coffee trees each, which makes lots from Hambela Goro truly multi-component blends. At the same time, the consistency and quality of this coffee are beyond extraordinary.In addition to direct involvement in coffee production, Olkai prioritizes social responsibility in order to empower producers they work with. Under Tagel’s leadership the company provides above-market rates for growers, distributes seedlings annually and supports the construction of schools and needed infrastructure within communities.ABOUT COFFEEThe cherries are collected at a really peak ripeness. Then they undergo several steps of hand sorting. After depulping the coffee is submerged in water, in tanks and goes through 48 hours of fermentation. Following this, the parchment is being moved to african beds for drying and that takes around 10-12 days, depending on the weather and humidity prevailing during this period.Several amazing factors, such as specific terroir, extremely high altitude, an amazing 74110 varietal, smallholders’ skills and the professional management and organization at Hambela Goto created a beautiful synergy, resulting in this wonderful washed coffee. Expect complex layers of florals and crisp citrus, backed by a deep, stone fruit-like sweetness. Simply a quintessence!ROASTER'S NOTEPeach iced tea captured in a coffee. A return to warm, summer days.V60 RECIPE16g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that 98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. But always taste and then judge your coffee.
