The fermentation brings a gentle boozy quality, while staying well balanced with a lasting chocolate note.ABOUT THE FARMIvan is the younger brother of Gertrudes and Joao Hamilton dos Santos. Together with his siblings and wife Rose, a partnership began with FAF (Fazenda Ambiental Fortaleza or Environmental Fortress Farm) in 2008 to change to sustainable, quality driven coffee farming. Fast forward and a whole region has been transformed, with neighbours collaborating and following the best possible farming practices. Named after the Brazilian Roadrunner which is native to the area, Ivan and Roses Sitio Seriema farm is a model of modern, responsible coffee production. We first tasted coffees from the family in 2014 and they have helped change our perception of Brazilian coffees. With a high proportion of Brazilian coffee produced at the lower ‘commodity’ standard, it has been an intriguing journey to see the beautiful terroir of the country properly expressed. Our relationship with Ivan and Rose has grown over the years and we have started investing in upgrades at their farm. With improved water treatment facilities the farm now fully cleans all water before releasing it back into the environment. Working with FAF, this project is now spreading across the region: helping to deliver a more sustainable model of coffee production.ABOUT THE PROCESSThis lot underwent fermentation for 36 hours: the whole cherries are sorted and cleaned, before being placed in a sealed anaerobic environment. The fermented cherries were then dried on patios with the whole outside cherry intact. The anaerobic process is a great match for the terroir of Brazil, bringing superb depth to the profile.ROASTER'S OPINIONThe first anaerobic lot we have featured from our partners Ivan and Rose dos Santos. In the cup, it is like sweet fig jam and velvety nougat: an espresso full of character.Store in a cold and dry space.

It belongs to Banexport – a company that handles pretty much everything along the entire local supply chain: production, export, collaboration with smaller producers from the Cauca region, as well as innovations and modern technologies in coffee production and processing.A whole range of the most prized Arabica botanical varieties is grown here (Geisha, Pink Bourbon, Java, Wush-Wush, or Laurina) across 14 hectares, most of which constitute a natural nature reserve with designated ecological trails. Many endemic plant and animal species make up an incredibly diverse ecosystem here.Workers at Santa Barbara can count on stable employment all year round, not just during the season. Everything is done formally here, with a social security package, insurance, and a wage that is significantly higher and fairer in the context of the conditions that usually still prevail in Arabica-producing countries.Interestingly, the farm does not have its own processing station, and the entire process, from fermentation to drying, takes place in... a laboratory in the very heart of the city of Popayan, the capital of the Cauca region.ABOUT COFFEE PROCESSING ON THE FARM The Pink Bourbon variety is hand-picked and, immediately after harvesting, transported in a refrigerated truck (sic!) to the Area 18 station in the center of Popayan. A one-kilogram sample is taken for preliminary analysis, where after obtaining data, such as sugar concentration or density, the decision regarding the final process is made.The cherries are cleaned and sorted, then undergo depulping (separating the seed from the fruit) and are placed in a bioreactor, which allows for full control of the fermentation process and manipulation of variables such as temperature, pH, pressure, or oxygen saturation. The latter stimulates the yeast strains naturally occurring in the fruit – during 48 hours of fermentation, this yeast converts sugars into aromatic precursors, which are responsible for the characteristic floral and fruity notes that lie within the Bourbon Rayado.After fermentation, the coffee is washed three times.Drying takes place mechanically in an advanced laboratory machine, which removes water from the beans to a precisely programmed value in a controlled, even, and repeatable process. It is characterized by two types of climate: cold and temperate, and coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes. Our coffee comes from a selected group of producers from the upper part of the municipality of Palestina, located at an altitude of approximately 1700 meters above sea level. This group of farmers has specialized in cultivating varieties such as Tabi and Caturra. Cooperativa Departamental de Caficultores del Huila Ltda. CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. Its reach covers 27 municipalities, where a support network operates consisting of 45 coffee purchase points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 points offering drying services. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialized coffees allows the cooperative to meet market demand for coffee purchased under specific conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, especially in Central America, where it was introduced into cultivation in the 1940s. This variety also played a significant role in breeding coffee plants resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. Tabi is a relatively young variety, created in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid variety. The word "Tabi" comes from the language of the indigenous people of Colombia and means "peace" or "life".ABOUT THE PROCESSINGThe coffee undergoes a traditional washing process, which begins with harvesting ripe cherries, weighing them, and leaving them for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after about 12 hours. Finally, the coffee is dried in the sun or mechanically, depending on the producer's capabilities.Store in a dry and cool place.

It is precisely responsible for the clarity of flavor, clean finish, and elegant balance of this coffee.The process begins with the selective harvesting of ripe coffee fruit. Pickers choose only red, properly ripe cherries, as even a small share of unripe fruit could disrupt the sweetness and balance of the final brew.Right after the harvest, the fruit goes to a water selection. The coffee cherries are submerged in water to discard light, unripe, or damaged fruits that float to the surface. Next, an additional manual quality control is conducted.The subsequent stage is depulping, which is the separation of the skin and most of the pulp from the bean. After this process, the beans are still covered with a sticky layer of mucilage – natural sugars and pectins.Then the coffee goes into fermentation tanks. This is one of the most important moments of the entire processing. Natural enzymes break down the remnants of the pulp, and producers very precisely control the fermentation time to maintain the cleanliness of the profile and avoid excessive, alcoholic notes. In the case of this coffee, fermentation emphasizes the sweetness and fruitiness while leaving the cup incredibly clear.After fermentation, the beans are thoroughly rinsed with clean water. Thanks to this, the last remnants of mucilage are removed, and the coffee gains the elegance, lightness, and structured flavor profile characteristic of washed processing.The next stage is drying. The beans in parchment are spread out on patios or African beds and regularly turned so they dry evenly under the Nicaraguan sun. The process lasts from a few to several days and has a huge impact on the stability and longevity of the flavor. At the end, the parchment husk is removed, and the green beans are sorted by size and quality.The result? An espresso that is simultaneously sweet, creamy, and fluidly fruity. The kind you return to not because it tries to surprise you with an extreme profile, but because it simply tastes great every single day.Store in a cold and dry space.

For many Ethiopians, coffee is a symbol, a national pride, and a lifestyle – the finalist of last year's Cup of Excellence certainly belongs to this group! His small farm of about 8 hectares is located in the Bensa region, which, in our opinion, holds the best quality potential. The crops here reach well above 2000 meters above sea level and usually consist of selected, single botanical varieties.Javier is the son of Don Andres, a producer whose coffees we have already hosted in our brown jars. His farm is just around the corner, and the terrace of the washing station offers such an extraordinary view of the valley and Lake Yojoa that if Bill Gates had visited this place, this very landscape would be known worldwide as the Windows desktop background. The Fernandez family (because there is also a second son, Nahun!) is not afraid to play around with processing, and thanks to bold experiments, year after year they deliver some of the best lots in all of Santa Barbara. This is an opinion, not a fact. But also a fact.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMWhat we have here is a 66-34 blend. The Ethiopia was processed as a natural – drying the coffee seeds inside the whole fruit. Freshly picked cherries undergo an initial selection, during which those with defects are rejected. Then, they are spread across so-called African beds – long tables, sometimes stretching for dozens (!) of meters, with a mesh lining that allows for even air circulation throughout the process, resulting in homogeneous drying. The whole process takes between 25 and 30 days, depending on the weather.On the other hand, Javier's lot is a longer-fermented honey – before depulping, the cherries fermented for 96 hours in a tank, and only later were they spread out to dry with a thick layer of mucilage. This technique extracted more deep, fruity-wine notes from the coffee.ROASTER'S OPINIONHere is our concept for this espresso: we created a roast profile that showcases the beautiful notes of flowers and fruits typical of high-quality Ethiopian coffees, but at the same time, on the flip side, offers quite a bit of chocolate-dessert depth, which also balances the acidity and gives the cup equilibrium. As a result, whether you brew it in an espresso machine, a moka pot, or even as a filter coffee, you will get a full, round, and complex coffee with a long-lasting, syrupy aftertaste!Store in a dry and cool place.

Coffee cherries are delivered to it by over 1,700 small-scale producers who grow coffee mainly on small plots of land.The crops are situated at an altitude of approximately 1,700–1,800 meters above sea level. The region is characterized by red volcanic soils, good access to water, and conditions that favor slower ripening of the fruit. Longer ripening can support the development of sweetness, acidity, and a more complex sensory profile.This is a classic Kenyan production model: small farms, a central washing station, fruit selection, and a consistently managed process. Simple. Effective. Good.ABOUT THE VARIETYThe dominant varieties are SL28 and SL34. These are classic Kenyan Arabica varieties, valued for their high sensory potential, especially in terms of vibrant acidity, fruitiness, and the structure of the brew.Batian and Ruiru 11 may also appear in smaller quantities, which are varieties introduced, among other reasons, for the plants' greater resistance to diseases. This season, we went for the Aji variety, already warmly received by you, which struck us with its transparency. We got a proper strawberry punch straight to the taste buds, and we are still recovering from that fruity knockout.In the cup, the strawberry was the main thing: fresh, but also a little more jammy. At times, we had the impression of those yoghurt-and-strawberry chocolates appearing in the flavour too. There is no doubt that a lot is going on here, and sensory boredom is not really an option. We completed the flavour profile with notes of mango and sea buckthorn to highlight the fresh, soft sweetness and intense acidity that stays with us long after the last sip. In truth, the range of associations was almost endless, so we narrowed it down to the notes that stood out the most and best captured this juicy, ripe fruitiness.ABOUT THE VARIETYWe write the variety simply as Aji, though its fuller name is Bourbon Aji. The name comes from… a pepper. Farmers in southern Huila noticed the distinctive aroma of the cherries, reminiscent of a small chilli pepper. Here comes the plot twist, though: genetic testing has shown that it is not a direct descendant of classic Bourbon, but a variety of Ethiopian origin.ABOUT THE PROCESSINGThe coffee and its processing come from Luis Marcelino of Aroma Nativo in Pitalito. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions. In the Jinotega region, coffee cultivation is a part of everyday life – most producers rely on traditional working methods and multigenerational experience.ABOUT THE PROCESSINGThe applied fully washed processing method, meaning full wet processing, has a huge impact on the cup's profile. It is precisely responsible for the clarity of flavor, clean finish, and elegant balance of this coffee.The process begins with the selective harvesting of ripe coffee fruit. Pickers choose only red, properly ripe cherries, as even a small share of unripe fruit could disrupt the sweetness and balance of the final brew.Right after the harvest, the fruit goes to a water selection. The coffee cherries are submerged in water to discard light, unripe, or damaged fruits that float to the surface. Next, an additional manual quality control is conducted.The subsequent stage is depulping, which is the separation of the skin and most of the pulp from the bean. After this process, the beans are still covered with a sticky layer of mucilage – natural sugars and pectins.Then the coffee goes into fermentation tanks. This is one of the most important moments of the entire processing. Natural enzymes break down the remnants of the pulp, and producers very precisely control the fermentation time to maintain the cleanliness of the profile and avoid excessive, alcoholic notes. In the case of this coffee, fermentation emphasizes the sweetness and fruitiness while leaving the cup incredibly clear.After fermentation, the beans are thoroughly rinsed with clean water. Thanks to this, the last remnants of mucilage are removed, and the coffee gains the elegance, lightness, and structured flavor profile characteristic of washed processing.The next stage is drying. The beans in parchment are spread out on patios or African beds and regularly turned so they dry evenly under the Nicaraguan sun. The process lasts from a few to several days and has a huge impact on the stability and longevity of the flavor. At the end, the parchment husk is removed, and the green beans are sorted by size and quality.The result? An espresso that is simultaneously sweet, creamy, and fluidly fruity.
