You can expect hints of papaya, passionfruit, blackberry and maple sirup.Origin: ColombiaRegion: TolimaProcessing: NaturalVariety: Colombia, Castillo, CaturraAltitude: 1700-2000 m a.s.l.ABOUT THE COFFEEGaitania is an exceptional lot created by smallholder producers from the vicinity of the town of Gaitania, located in the municipality of Planadas in the south of the Tolima region. The coffees come from plantations situated at an altitude of 1,700–2,000 m above sea level, where the Castillo, Caturra, and Colombia varieties are cultivated. Combining beans from several farmers made it possible to create a coffee with a distinct, juicy character that perfectly reflects the potential of this region.ABOUT THE PROCESSINGAfter harvesting, the ripe cherries fermented for 38 hours and then dried for eight days on raised, covered African beds. The slow and controlled drying highlighted the natural sweetness and complexity of flavor. In the cup, you will find juicy papaya and passion fruit, notes of wild berries, and the velvety sweetness of maple syrup. The overall profile is intense, fruity, and slightly funky – full of character, yet perfectly balanced at the same time.ROASTER'S OPINIONGaitania is Colombia without compromise. From the very first sip, it draws attention with its intense character and juicy, fruity profile. It is a natural full of energy, distinct sweetness, and aromas that linger in the memory for a long time.Exotic notes of ripe papaya and juicy passion fruit dominate the cup, offset by a clear accent of wild berries. Everything is tied together by the velvety sweetness of maple syrup, which gives the coffee depth and pleasantly coats the palate. It is a rich, multidimensional, and remarkably satisfying profile. It is precisely the combination of exotic fruits, intense sweetness, and syrupy smoothness that gives this coffee its characteristic, funky style. It is bold, full-bodied, and distinct, with every subsequent sip revealing new nuances of flavor. This is a choice for those seeking coffees with character who are not afraid of intense, fruity taste experiences.Store in a dry and cool place.

HAYB - Birthday Coffee Colombia Los Nogales Chocoberry Natural Filter 200 g

Manufacturer: HAYB

Roasting date: 25.06.2026

Specialty-grade whole bean coffee from Colombia, roasted by the Warsaw-based roastery HAYB. Light roast, ideal for filter coffee makers, drippers, Chemex, AeroPress, French Press, and other alternative brewing methods. The flavor profile features notes of strawberry, raspberry and milk chocolate.Country of origin: ColombiaRegion: Bruselas, HuilaVariety: Pink BourbonProcessing method: Chocoberry NaturalCupping score: 88 / 100Altitude: 1600 -2000 m a.s.l.ABOUT THE PROCESSThe farmer himself, Oscar Hernandez, named this processing method this way because the final taste of the brewed coffee reminded him of something right on the borderline between chocolate and currants. How did it happen? Hand-picked cherries – nothing unusual. But then – SHOCK. Thermal! The cherries were submerged in water at a temperature of 180°F (80°C) for 30 to 60 seconds. Next, the fruits were washed and underwent ozonation. The seeds were extracted, and the juicy experimenting began. Juice was squeezed from the skins of still-fresh cascara. The juice was mixed with the beans in fermentation barrels. With the help of the necessary microorganisms, the beans underwent lactic fermentation for 220 hours. After that, just 20 days of drying, and there you have it.Reading this description, you might think it would turn into pickled cucumbers, or at least kombucha. Nothing of the sort. It is sweet, juicy, and crisp. Yum.Store in a cold and dry space.

COFFEE OF THE MONTH
ESPRESSO OF THE MONTH: BeMyBean - Guatemala Ayarza Anaerobic Natural Espresso 250 g

Manufacturer: BEMYBEAN

Roasting date: 14.07.2026

Whole-bean specialty coffee from Guatemala, roasted by BeMyBean polish roastery. Dark roast, perfect for espresso, coffee machines, and moka pots. You can expect hints of mirabelle plum, almond cookies, cherry jam, nectarine and gooseberry.Country: GuatemalaRegion: Santa RosaFarm: AyarzaProcessing: Anaerobic naturalAltitude: 1600 - 2000 m a.s.l.Variety: Anacafe 14, Bourbon, PacheABOUT THE COFFEEGuatemala Ayarza is an offering for those who enjoy modern, fruity espresso with a distinctly marked sweetness. It comes from the Ayarza region in the Santa Rosa department, where the high altitude of the plantations, volcanic soils, and cool climate favor the creation of beans with great complexity. The cup is dominated by juicy notes of mirabelle plum, nectarine, and gooseberry, which smoothly transition into the sweetness of cherry jam and subtle buttery almond cookies. Medium-high intensity ensures that the coffee remains distinct, yet at the same time remarkably pleasant and balanced.ABOUT THE PROCESSINGThe exceptional character of this coffee is heavily influenced by the anaerobic natural processing method, which requires great precision at every stage. The process begins with meticulous hand-harvesting of only fully ripe cherries. Next, the coffee cherries are thoroughly sorted so that only the finest fruit moves on to further processing. The next stage is the fermentation of whole fruits in an anaerobic environment. The cherries are placed in sealed bags from which oxygen access is removed. For about 120 hours, a controlled fermentation takes place, during which yeast and microorganisms intensively develop complex aromatic compounds while maintaining full control over the process flow. As a result, the coffee gains greater sweetness, depth, and an intensely fruity character. After fermentation is complete, the fruits are spread out in a very thin layer on the patio to immediately halt the fermentation process and begin even sun-drying. The result of this demanding processing is an espresso with a creamy body, distinct fruitiness, and a long, sweet finish. Guatemala Ayarza perfectly demonstrates how skillfully executed anaerobic fermentation can highlight the natural potential of the beans, creating a coffee full of juicy fruit and dessert-like sweetness. Finally, dessert sweetness, juicy fruit notes, and fruit-derived acidity meet in the cup. The espresso has a silky body and leaves a long, pleasant finish. It works great as a dose of refreshment on its own. When combined with milk, it takes on even greater sweetness, while the fruity accents become gentler, resembling a creamy dessert. Guatemala Ayarza also fits perfectly into a summer lineup – served with tonic and ice cubes, it delights with its refreshing, juicy character.COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. We had the chance to talk several times during World of Coffee and a few times on calls – you don't meet such warm and wise people every day. This is one of those coffees that, beyond its taste and quality, stands out because of the story behind the farm. If I could, I would choose only coffees for our portfolio where a good, sweet, clean taste goes hand in hand with a spark of passion and wisdom in the eyes of the people running the farm. Hard Beans - Kenya Mugaya AA Top Washed Filter 250 g

Manufacturer: HARD BEANS

Roasting date: 12.08.2026

Specialty-grade whole-bean coffee from Kenya, roasted by the Polish roastery Hard Beans. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of citrus, red currants, black tea and honey.Origin: KenyaRegion: KirinyagaFarm: MugayaProcessing method: WashedVariety: SL28, SL34Altitude: 1700 – 1800 m a.s.l.ABOUT THE FARM AND REGIONMugaya is a washing station established in 1975, operating under the Mutira Farmers’ Cooperative Society. It is located in the Kirinyaga region, Kagumo area, at the foothills of Mount Kenya. Coffee cherries are delivered to it by over 1,700 small-scale producers who grow coffee mainly on small plots of land. The crops are situated at an altitude of approximately 1,700–1,800 meters above sea level. The region is characterized by red volcanic soils, good access to water, and conditions that favor slower ripening of the fruit. Longer ripening can support the development of sweetness, acidity, and a more complex sensory profile. This is a classic Kenyan production model: small farms, a central washing station, fruit selection, and a consistently managed process. Simple. Effective. Good.ABOUT THE VARIETYThe dominant varieties are SL28 and SL34. These are classic Kenyan Arabica varieties, valued for their high sensory potential, especially in terms of vibrant acidity, fruitiness, and the structure of the brew.Batian and Ruiru 11 may also appear in smaller quantities, which are varieties introduced, among other reasons, for the plants' greater resistance to diseases. However, the character of this coffee is primarily built by SL28 and SL34.ABOUT THE PROCESSINGAfter harvest, the coffee cherries are delivered to the station and sorted. Then, the skin and part of the pulp are removed from the fruit, and the beans undergo fermentation, washing, and drying on raised beds. In the case of Mugaya, clean water from the Rwamuthambi River is used in the process. The washed process allows for limiting the influence of the pulp on the coffee's flavor and better showcases the natural acidity, cleanliness of the aroma, and structure of the brew.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind: mediumBrewing time: 3:30 minutesMethod: Pour water over the coffee in 5 equal parts (e.g., 5x 60g) at 30-second intervals. The water should completely drain through the coffee between pours. If the water flows too slowly or too quickly, change the grind size to coarser/finer.Remember to use soft, filtered water!Store in a dry and cool place.

Diverse topography, high-altitude crops, and specific microclimatic conditions make it possible to obtain coffees with high sweetness, well-defined acidity, and great profile clarity. The producer specializes in high-quality coffees and controlled processing. In this case, the most important aspect is preserving the distinct character of the Gesha variety: floral notes, fruity sweetness, and a delicate brew structure.ABOUT THE VARIETYGesha is an Arabica variety valued for its high aromatic potential, particularly towards floral notes, stone fruits, and delicate, well-defined acidity. In this case, the profile leans towards white flowers, peach, caramel, and chocolate. This is a coffee where it is not about a heavy fermentation effect or excessive intensity. Profile clarity, sweetness, and the easily recognizable character of the variety are more important.ABOUT THE PROCESSINGWashed processing involves removing the skin and part of the pulp from the coffee cherry, carrying out fermentation, rinsing off the remaining pulp, and drying the beans. This process usually yields greater profile clarity than natural or honey processing. In this coffee, washed processing helps balance the acidity and better highlight the features of the Gesha variety. As a result, the brew features a floral aroma, fruity sweetness, and a chocolate-caramel base.ROYAL BEANSWhat’s behind the name Royal Beans? However, the Bayter family has rapidly transformed the plantation into one of the most advanced in the industry in terms of complex processing and cultivating a whole range of select, highly sought-after botanical varieties, such as Geisha, Pink Bourbon, Laurina, or Pacamara.Currently, El Vergel is conducting continuous research on bacteria and yeast to achieve even greater precision in controlling fermentation, and consequently, modulating flavor. In addition to coffee production, the Bayters are the force behind Forest, a company involved in both the export and import of green coffees, which means we were able to purchase this coffee directly, without any intermediaries.ABOUT THE COFFEE PROCESSING ON THE FARMThe Caturra variety, hand-picked, processed as washed, and decaffeinated using the sugarcane method with ethyl acetate, which reduces the caffeine content to approximately 0.1%.ROASTER'S OPINIONHonest truth – in a blind tasting, we would have trouble realizing this is a decaf.
