Here we have the classic washed, with a little twist, because after depulping, the coffee fermented together with the pulp separated from it earlier for two days. Then drying.
PRODUCER
Wilder is a veterinarian by training, specializing in animal husbandry. In 2016, when coffee prices were in notorious decline and his father became seriously ill, he and his brother decided to uplift the family farm.
Despite implementing complex processes and tightly controlled processes, their coffees initially cupped only in the 80-83 range on the cupping scale. Wilder began testing soil samples and applying specific nutrients and fertilizers to neutralize the pH value, thereby increasing the availability of nutrients for the trees.
Today these effects are more apparent than ever, and this pink bourbon is another coffee from Wilder that delights us with its complexity.
Wilder also has a fixation on coffee genetics. He has been growing dozens of different botanical varieties for years, experimenting with processes and farming. He’s in quite a position to do so, as his La Dinastia is located in the small Huila region, famous for its phenomenal coffee-growing conditions. He’s one of those producers who push forward and take no prisoners when it comes to quality and pushing the boundaries!
ROASTER'S COMMENT
One of the best pink bourbons I’ve ever drunk. A billion layers, here we have both blueberry-style fruit and distinct floral stories, as well as a whole bunch of herbs and spices. All at high intensities, with juicy, elegant, viscous sweetness and crisp, ripe as hell acidity. A masterpiece!
PACKAGING
The coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! A plastic jar turns out to be pretty eco-friendly, just remember to put it in the right container, or find a creative way to reuse it at home.
