Specialty coffee from Brazil, roasted in Poland at Heresy roastery by Roasting 2020 Polish Vice Champion - Piotr Jeżewski. Light roast, designed for filter or cup brewing methods. A coffee characterised by a fruity profile complemented by floral notes, untypical for Brazilian coffees.

PROCESSING
The key word: yeast! After sorting, the berries are placed in a disinfected plastic barrel, and a solution of a specially selected, specific yeast culture is sprayed on each successive layer of cherries. The tank is then sealed tightly, and fermentation with limited oxygen takes two days. After this time, the coffee is rinsed with clean water to stop the process immediately. Finally, it is put into African beds for drying.


THE FARM
Samambaia is a farm owned by a true legend of Brazilian coffee - Henrique Cambria, a multiple Cup of Excellence finalist. During one hot Brazilian summer, Henrique hosted us at his beautiful home, from which we made a base to visit the surrounding farms affiliated with the San Coffee cooperative. Knowledge, experience and a bag of amazing anecdotes - we soaked it all up from this amazing guy late into the night. Henrique is one of the pioneers when it comes to complex, fruity and against the stereotypes of "boring, chocolate and nutty Brazilian" microlots. Samambaia exemplifies an ultra-professional, substantive approach to running a farm: detailed phytosanitary inspections of the fields, continuous training based on modern quality control programs and, most importantly, an above-average commitment from the entire team working on the farm.



ROASTER'S COMMENT
Selected yeast strain + anaerobic processing and we have a tasty treat for fans of intense and unobvious brews. Fazenda Samambaia is a strict top and one of the most recognized and respected farms in Brazil. Henrique is one of the pioneers when it comes to producing complex, fruity microlots that break the stereotype of "boring, nutty Brazilian".


PACKAGING
The coffee is packed in a brown jar made of PET, 100% recyclable or reusable. And if you're now thinking "oh no, plastic!", keep in mind that standard coffee packaging is also made of plastic (and several other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, shatters and, mind you, has the same or greater (sic!) environmental impact! A plastic jar turns out to be quite eco-friendly, just remember to put it in the right container, or find a creative way to use it at home.
