Matcha Kotobuki is a classic matcha of very good quality, produced completely without the use of artificial pesticides. It is worth noting that it has been ground just before being shipped from Japan to our warehouse, making it an extremely fresh product.
The tencha, or matcha tea leaves before grinding, are of course from the first harvest and were covered with shade mats for about 22 days before harvesting. Its taste qualities are further enhanced by the volcanic soils on which the bushes grow. This tea is ideal for a daily matcha in a light usucha style with a very rich, sweet flavour.

How to brew:
1.6g matcha / 70ml water / temp 75-80°C
Soak the fibres of the chasen (bamboo broom) for half a minute in warm water. It's a good idea to sieve the matcha through a strainer straight into a chawan (large tea bowl/pot) to avoid clumping. Add the water and stir the chasen 4-5 times in a sweeping circular motion across the bottom of the bowl to set the powder in motion, then vigorously move the chasen in a 'W' shape back and forth across the bottom of the bowl for 30 seconds. Finally, lightly 'run' the chasen over the top of the brew to gently break up any excessive foam.
