Located at an altitude of over 1500 m a.s.l. on fertile, volcanic soils, it is a rare example of a full-scale plantation in a country dominated by small, backyard crops.The site employs chemical-free practices with an emphasis on a sustainable approach and natural shading, which supports even ripening of the fruit. Harvesting is done by hand, selecting only fully ripe cherries, which allows the proper balance of sugars and acidity to be maintained at the raw material stage. The processing is a classic washed method with extended fermentation. The beans ferment for three days, during which they are rinsed daily, followed by an additional day of fermentation. After this stage, the coffee is sun-dried for a minimum of 21 days and undergoes multi-stage sorting, which translates into the clarity and repeatability of the profile.ROASTER'S OPINIONThe opinion of Filip Ślęczek – our head roaster: Papua New Guinea – we haven't had coffee from this region for several years. And when it finally appeared, it made its way to Coffeedesk! It is safe to say that this is an unusual daily coffee. You will find a lot of clean, halva-like sweetness, broken by the acidity of dark grapes (you certainly know the taste of thick grape skin), with the whole subtly seasoned with a hint of thyme. Chelbesa is the largest coffee-growing area in Gedeb, spanning 1240 hectares of plantations situated between 1925 and 2110 m a.s.l. Thanks to the proximity of the station, none of the local farmers have to transport their cherries for longer than 40 minutes, which allows them to maintain their freshness before processing begins.SNAP Coffee, an Ethiopian exporter, was founded in Addis Ababa in 2008 by Negusse D. Weldyes. The company operates three processing stations in the Chelelektu region in the Kochere district (Gedeo zone) and also cooperates with stations in Uraga (Guji) and Nensebo (West Arsi). Each of them serves an average of about 550 farmers. SNAP Coffee bases its operations on three pillars: consistently maintaining the high quality of specialty segment coffees, sharing knowledge and training in coffee processing and cleaning, and implementing waste recycling systems to protect the environment.ROASTER'S OPINIONWe don't have favorites among our coffees…...but Ethiopia Chelbesa is the closest to being the one we would point to. If we had a "Roaster's Choice" category, it would definitely be there. We had beans from the Chelbesa washing station in our roastery for the first time in 2021. To say we liked them is an understatement. We remembered them long after they were gone. This is what we love about Ethiopias – distinct peach, flowers, and herbs. Plus a deep sweetness. This year we bought twice as much of it as last year, and we assume this trend will continue next year.Store in a dry and cool place.

But as it happens, until now these were mainly anaerobic, extended natural, and similar processes. In other words, the kind where the processing itself heavily influences the coffee's character. This time, however, we are offering you a washed coffee from Indonesia – it allows you to truly taste the origin.Frinsa is an estate that has been operating since 2010. It is run by a married couple, Wildan Mustofa and Atieq Mustikaningtyas. It consists of six farms with a total area of 105 hectares and its own washing station with a laboratory for anaerobic processing. Since its inception, the estate has focused on quality coffees. Initially, this was primarily related to producing coffees using the washed process, which is rare in Indonesia. Later, experimental processes were added to the mix. Thanks to the experience of the Mustofa and Mustikaningtyas couple and continuous investment in infrastructure, these coffees are always of the highest standard.ROASTER'S OPINIONThis is our first washed bean from Indonesia. And what a hit right off the bat. Very sweet, with a dense, buttery body. Spices, herbs, caramel. Once you finish a cup, you'll immediately think about the next one.Store in a dry and cool place.

His father was a legend of Guji during his lifetime, building the region's first wet mill in the early 2000s, whose infrastructure began to be used by small producers of the Bule Hora community. When the Ethiopian government liberalized export regulations in 2018, which practically opened up opportunities for smallholders to sell their coffee outside the country, Tagel founded the Olkai company and, in addition to exporting, also took over the coordination of the Hambela Goro mill.The coffee comes from 460 small producers in the area, from an impressive altitude of approx. 2,300 meters above sea level. They cultivate the local 74110 variety here, and many of them own only a few hundred trees. The organization, standards, and cleanliness at Hambela Goro made a big impression on us, as did the incredibly clean and consistent lots that we had the opportunity to taste fresh while still on site.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMVariety 74110, hand-picked by 460 small producers from around Hambela Goro, depulped, and then fermented in a tank for 48 hours. Washed, dried on raised beds for 12 days.ROASTER'S OPINIONA washed Ethiopian classic in its pure form. It belongs to Banexport — a company involved in virtually every stage of the local coffee supply chain: production, export, collaboration with smaller producers from the Cauca region, as well as innovation and modern technologies in coffee cultivation and processing.A full range of the most highly valued Arabica botanical varieties is cultivated here (geisha, pink bourbon, java, wush-wush, and laurina) across 14 hectares, the majority of which consists of a protected natural reserve with designated ecological trails. Numerous endemic plant and animal species form an exceptionally diverse ecosystem.Workers at Santa Barbara can count on stable, year-round employment, not just seasonal work. Everything operates formally, with social benefits, insurance, and wages that are significantly higher and more equitable compared to the conditions that still commonly prevail in many Arabica-producing countries.Interestingly, the farm does not have its own processing station. The entire process — from fermentation to drying — takes place in… the very heart of the city of Popayán, the capital of the Cauca region. And there’s one more thing. We have never recommended checking the “ABOUT PROCESSING” section this strongly before.ABOUT COFFEE PROCESSING ON THE FARMLet’s begin with the botanical variety.A few years ago, several producers in Huila (a department in Colombia) discovered that some coffee trees on their farms were producing unusual cherries — the fruit displayed distinct, light, thin stripes along its entire surface, and the beans themselves were slightly elongated in shape. They separated this intriguing phenotype from traditional red bourbon to determine whether the differences would also be noticeable in the cup. They were.Bourbon Rayado, as they named the varietal (literally “striped bourbon”), is characterized by potentially higher complexity and a distinctive floral-herbal layer.Due to the recent discovery, no genetic studies on Rayado are yet available. Some believe it is most likely a natural mutation of classic Bourbon; others suggest it could be a mutated Pink Bourbon, which itself traces genetically in a direct line to local Ethiopian varieties.Now, the process.The Bourbon Rayado (Striped Bourbon) variety is hand-picked and immediately transported in a refrigerated vehicle (yes, really) to the Area 18 station in downtown Popayán. A one-kilogram sample is taken for preliminary analysis. Based on data such as sugar concentration and density, the final processing method is determined.The cherries are cleaned and sorted, then undergo depulping (separation of the seed from the fruit) and are transferred to a bioreactor that allows full control over the fermentation process and manipulation of variables such as temperature, pH, pressure, and oxygen saturation. The latter stimulates the naturally occurring yeast strains present in the fruit. During 48 hours of fermentation, these yeasts convert sugars into aromatic precursors responsible for the characteristic floral and fruit notes inherent in Bourbon Rayado.After fermentation, the coffee is washed three times. Drying is mechanical, performed in an advanced laboratory-grade machine that removes moisture from the beans in a controlled, even, and repeatable process to a precisely programmed value. The entire drying stage takes only three days.ROASTER’S OPINIONThis is coffee in a tuxedo — and not just any tuxedo, but one tailored by a pre-war master craftsman.It feels as though 120% of both the bean’s potential and the washed method itself has been extracted here. Crystal-clear fruit layers and a definition of transparency that borders on architectural precision.Store in a cold and dry space.
