A coffee characterised by a fruity profile complemented by floral notes, untypical for Brazilian coffees. Country: Brazil Region: Campo das Vertentes Varietal: yellow catuai Processing: yeast-inoculated anaerobic natural Producer: Henrique Cambria Farm: Samambaia Altitude: 1000-1200 m a.s.l. Harvest: lipiec 2023 Cupping score: 87 / 100 points PROCESSING The key word: yeast! After sorting, the berries are placed in a disinfected plastic barrel, and a solution of a specially selected, specific yeast culture is sprayed on each successive layer of cherries. The tank is then sealed tightly, and fermentation with limited oxygen takes two days. After this time, the coffee is rinsed with clean water to stop the process immediately. Finally, it is put into African beds for drying. THE FARM Samambaia is a farm owned by a true legend of Brazilian coffee - Henrique Cambria, a multiple Cup of Excellence finalist. During one hot Brazilian summer, Henrique hosted us at his beautiful home, from which we made a base to visit the surrounding farms affiliated with the San Coffee cooperative. Knowledge, experience and a bag of amazing anecdotes - we soaked it all up from this amazing guy late into the night. Henrique is one of the pioneers when it comes to complex, fruity and against the stereotypes of "boring, chocolate and nutty Brazilian" microlots. Samambaia exemplifies an ultra-professional, substantive approach to running a farm: detailed phytosanitary inspections of the fields, continuous training based on modern quality control programs and, most importantly, an above-average commitment from the entire team working on the farm. ROASTER'S COMMENT Selected yeast strain + anaerobic processing and we have a tasty treat for fans of intense and unobvious brews. Fazenda Samambaia is a strict top and one of the most recognized and respected farms in Brazil. Henrique is one of the pioneers when it comes to producing complex, fruity microlots that break the stereotype of "boring, nutty Brazilian". PACKAGING The coffee is packed in a brown jar made of PET, 100% recyclable or reusable. And if you're now thinking "oh no, plastic!", keep in mind that standard coffee packaging is also made of plastic (and several other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, shatters and, mind you, has the same or greater (sic!) environmental impact! A plastic jar turns out to be quite eco-friendly, just remember to put it in the right container, or find a creative way to use it at home.

Country: Colombia Region: Antioquia Farm: La Claudina Varietal: Colombia, tabi Processing: natural Producer: Juan Saldarriaga Altitude: 1400 - 1800 m a.s.l. Cupping score: 87 / 100 points PROCESSING Harvested by hand, selectively, with even more emphasis on the ripest fruits, which go to the natural. Then to water, to get rid of floaters (unripe or defective cherries), 48 hours of fermentation in the tank and to dry. All ready after about 25 days. PRODUCER Juan Saldarriaga is the gentleman behind the coffee production at his La Claudina. Harvesting in the Ciudad Bolivar area takes place once a year, between September and January, which means we're in for a real treat here! The Antioquia region is mainly associated with the mass production of commercial quality coffee, and Juan himself was involved in growing and exporting in this sector until 10 years ago. Around that time, a growing number of smaller producers in the area decided to take the opposite path, focusing on achieving more interesting quality results - and this allowed them to enter the specialty coffee segment. Juan transformed the grassroots initiative into a rigid group of committed, experience-exchanging producers who are constantly working to improve standards at all stages of the production of these interesting entrees. ROASTER'S COMMENT Who doesn't love a sweet and flavorful natural from Colombia? Lots of candy-wine sweetness, a whole range of fruity associations - from tropics to blueberries. Complex, intense and round like the orbit of Venus. PACKAGING The coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In the cup, noticeable notes of forest fruits, flowers, herbs and spices complemented by sticky sweetness and ripe acidity. Country: Colombia Region: San Adolfo, Huila Varietal: pink bourbon Processing: washed Producer: Wilder Lazo Farm: La Dinastia Altitude: 1500 m.a.s.l. Cupping score: 87 / 100 points PROCESSING Here we have the classic washed, with a little twist, because after depulping, the coffee fermented together with the pulp separated from it earlier for two days. Then drying. PRODUCER Wilder is a veterinarian by training, specializing in animal husbandry. In 2016, when coffee prices were in notorious decline and his father became seriously ill, he and his brother decided to uplift the family farm. Despite implementing complex processes and tightly controlled processes, their coffees initially cupped only in the 80-83 range on the cupping scale. Wilder began testing soil samples and applying specific nutrients and fertilizers to neutralize the pH value, thereby increasing the availability of nutrients for the trees. Today these effects are more apparent than ever, and this pink bourbon is another coffee from Wilder that delights us with its complexity. Wilder also has a fixation on coffee genetics. He has been growing dozens of different botanical varieties for years, experimenting with processes and farming. He’s in quite a position to do so, as his La Dinastia is located in the small Huila region, famous for its phenomenal coffee-growing conditions. He’s one of those producers who push forward and take no prisoners when it comes to quality and pushing the boundaries! ROASTER'S COMMENT One of the best pink bourbons I’ve ever drunk. A billion layers, here we have both blueberry-style fruit and distinct floral stories, as well as a whole bunch of herbs and spices. All at high intensities, with juicy, elegant, viscous sweetness and crisp, ripe as hell acidity. A masterpiece! PACKAGING The coffee is packed in a brown jar made of PET, 100% recyclable or reusable.
