It’s not easy to find beans that match our taste preferences in a country roughly the size of the UK or Romania, but with a population density closer to that of the Netherlands or Poland. Uganda is relatively densely populated, and agriculture drives the economy—but most farmers grow Robusta.But rest assured, we managed to find a fruity bomb, a true gem.Norman’s farm is located at the foot of Mount Elgon in Uganda, sourcing cherries from the regions of Sironko, Mbale, Bulambuli, and Kapchorwa. The Coffee Yard is a large reception and drying center for coffee cherries. With almost 20 years of experience in the industry, Norman has specialized in natural-process coffees since 2018, continually refining his processing methods to achieve ideal flavor profiles.The processing steps include:• Selecting and washing cherries to remove defects.• Initial drying on raised beds.• Additional sorting by color and moisture content.• Fermentation in open tanks, which contributes to the coffee’s unique flavor notes.• Drying for about 21 days until moisture drops below 12%.After an additional week, the beans are hulled, hand-sorted and optically sorted, then prepared for export.ROASTER’S NOTEThis coffee truly surprised me! Another lesson showing that it’s worth exploring unknown paths, staying curious, and continuing to search. El Diviso sits at an elevation of 1,780–1,900 m a.s.l., while Las Flores is located at 1,700–1,790 m a.s.l. Both farms focus on experimental processing methods and cultivate a wide range of botanical varieties.This lot is a blend of the Tabi and Yellow Colombia varieties. The coffee undergoes double fermentation: first an aerobic stage, followed by anaerobic submerged fermentation aimed at enhancing stone-fruit notes. After fermentation, the coffee is subjected to a “thermal shock” using hot and cold water to minimize aroma loss and preserve the desired sensory profile. Drying begins naturally under cover, after which the coffee is finished mechanically in a silo. It then rests for at least 10 days before final milling.Coffees from Las Flores and El Diviso regularly appear in winning routines at Barista Championships—on the World Barista Championship stage (including the 2025 World Barista Champion) as well as in the Polish Barista Championship—further confirming their exceptional potential.ROASTER’S NOTENestor Lasso and Johan Vergara are pioneers of the new wave of Colombian coffee producers. Both farms (El Diviso and Las Flores) are truly impressive, and although I have visited them several times, each visit brought new solutions and innovations. When the result of their collaboration—Carambolo Estate—appeared on our cupping table, it was immediately clear that these beans would become this year’s filter coffee of December. Founded in 2018 near the town of Palestina in southern Huila, the station was built to support local farmers by providing easier access to coffee processing and sales. Today, 214 nearby farmers deliver their freshly harvested cherries to El Puente—most of them of the Castillo variety.El Puente focuses primarily on honey, natural, and other experimental fermentation methods, all while minimizing water usage.This particular lot is 100% Castillo, processed using the honey method. Upon arrival at the station, cherries underwent an initial selection to remove debris and under- or overripe fruit. Then, they were placed in a water tank to eliminate remaining floaters and defects. Next, the cherries were pulped to remove the skin, and the beans were placed in anaerobic fermentation tanks for 6 hours. Afterward, they were dried on raised beds for about 20 days until reaching optimal moisture content. Finally, the beans were cleaned, vacuum-packed in GrainPro bags, and prepared for export.Thanks to this carefully designed process, the result is a uniform, defect-free coffee with beautifully developed beans—an excellent base for precise roasting.ROASTER'S NOTESInside this bag, you’ll find 100% Castillo – a variety known for its high yield, resistance to fungal diseases, and exceptional balance between sweetness and acidity.In the aroma, you’ll discover sweet notes of strawberry and banana, complemented by delicate floral hints.In taste, these fruity tones dominate, harmonized by a pleasant, grapefruit-like acidity. The cup has a rich, syrupy body and a long, sweet, fruity finish.This coffee stands out for its exceptional sensory profile and remarkable precision in processing and selection. The farm also features a large facility where coffees are mechanically dried, ensuring high consistency and even drying every time.In this lot, we get plenty of tropical fruit—but also candied ones, just like in a Christmas fruitcake! Cultivated at around 600 masl, it underwent anaerobic processing with added fermenting yeast. You’ll find notes of dark chocolate, spices, honey, and dried fruit.This Fine Robusta from Panama has a high body—typical for this species—subtle fruity acidity, and a long chocolaty finish. Its aroma reveals hints of spices, dried fruits (plum, apricot), and cocoa. The flavor is dominated by dark chocolate, spices, dried fruit, and honey. There is also a slightly herbal/tobacco character, which is typical for this type of coffee.The cherries of this Canephora were first soaked briefly, then moved to another tank with water where fermenting yeast was added for anaerobic fermentation. After 48 hours, the coffee was passed through a depulper, then spread on raised beds to dry.          THE FARMKiva Estate is a group of native Panamanians with diverse professional backgrounds, whose 30-year friendship eventually led them into the world of coffee cultivation. Two team members already owned pastureland and cattle, and during one of their gatherings, the idea of growing Fine Robusta was born.The team spent a year learning throughout South and Central America—visiting top farms, trade shows, and meeting experts. The challenge was the low popularity of Robusta and the lack of proper equipment, and in some countries its cultivation was even prohibited. With help from Olmedo in Nicaragua and BRS2314 seeds from Brazil, the first plantation near Penonomé in Coclé was established.Step by step, the team assembled post-harvest processing equipment, despite jokes and laughter from neighbors. The first harvests were promising, and Kiva Estate’s Fine Robusta gained recognition in Europe during World of Coffee in Athens, reaching prestigious coffee spots.This unusual combination of a Brazilian robusta variety, the experience of the Kiva Estate team, and the unique growing environment resulted in the production of Fine Robusta from Panama.ROASTER’S OPINIONInterest in fine robustas in our market is lower than it was 2–3 years ago, but around the world more and more countries are trying to create much more drinkable robustas than the ones we associate with espresso-roasted blends. What’s interesting here is that when we think of Panamanian coffee, we usually think of Geisha. In this case, we have a Brazilian variety grown in Panama at about 550–600 masl. The processing itself was quite intense—anaerobic with added yeast. As a result, we get a high-quality fine robusta with a complex sensory profile that only subtly resembles the typical character of this species.In the aroma, the coffee smells of herbs and nuts, with noticeable notes of dried fruit and alcohol. In the taste—high body, very low and smooth acidity, spices, honey, and dried fruit. This is definitely not a coffee for everyone—especially those who prefer light, very delicate Arabicas. Here we are dealing with a rather intense coffee, one that gently reminds us that it is indeed a robusta.
