So farmers have had to adjust to the conditions and as a consequence the use of water is limited. On top of that, they have been fermenting their coffees into closed environments (often thick plasticbags under shade) to allow yeasts to form and add a distinctive fruity profile to their cups. Of course they supervise the levels of fermentation to avoid defects.The story of the Santacruz brothers fits within many farmers in Peru as they used to sell their entire crops to local buyers that would arrive at their farm door and take the bags away at a cheap price. Now they deliver their coffee to Cultivar, where after through quality control they receive a much higher price for it. This gap in price is a great help in their income that they complement with growing cattle. Cajamarca is very well known for its cattle culture, providing the region with an abundant amount of cheese, milk and beef.As for the future of the Santacruz family and their coffee business we have very good hopes. Jesus, one of the brothers, has recently bought a few extra hectares of land with the idea to plant more exotic and delicate varieties like Geisha and he is a good representation of the younger generation of farmers that will take the lead in the coffee production in the years to come in Cajamarca.ROASTER'S OPINIONSuper floral and sweet coffee that reminds us slightly of the Geisha botanical variety, even though it isn't one.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. This time, it is the beans from Ismeria Leon.In the aroma, the coffee is fresh and fruity — green apple clearly dominates, complemented by delicate cranberry and caramel sweetness. On the palate, the profile remains very consistent: juicy apple appears in the foreground, enveloped in caramel, with hints of cranberry and grape.The whole has a medium, round body and low, smooth acidity reminiscent of an unripe apple. The sweetness is high and caramelly, and the aftertaste is medium-long, pleasantly sweet, and balanced. This is a coffee with very good balance and a clean profile — definitely an example of how good Peru can be.RECIPEWe recommend brewing this coffee using a dripper — from Hario or Origami. A key step was the launch of their own processing station in 2015, which was expanded in 2025, allowing them to take full control over production and the preparation of beans for export.Production is based on a "variety-driven" approach, meaning the creation of microlots by variety and specific plots. The crops are dominated by both classic varieties, such as Caturra and Catuai, as well as more demanding and highly valued ones, including Gesha, SL28, Ethiopia 47, and Java. This approach allows them to precisely match the processing methods to the characteristics of the raw material and maximize the sensory potential of each lot.The farm utilizes a wide range of processing methods: from classic washed and honey to more advanced natural, anaerobic, and extended fermentation processes. Fermentations are conducted under controlled conditions, often in sealed tanks, with the duration and parameters precisely tailored to specific varieties. Drying takes place mainly on raised beds and patios, and the entire process – from harvesting to stabilization and dry milling – is strictly monitored.The result of this approach is coffee with high clarity and a complex profile: from elegant, clean Geshas and structured honeys to intense, controlled anaerobics with distinct fruitiness and winey notes. The quality of production is confirmed by numerous successes in the Cup of Excellence competition, where the farm has placed at the top multiple times, including first place in 2025.Our beans are a selection of peaberry, sourced from the coffees that won awards in this year's Cup of Excellence. Peaberry is a naturally occurring type of bean – about 10-15% of coffee beans do not split in half but remain as a single whole. Traditionally, they are separated from the rest for the consistency of the lot. It consists of six farms with a total area of 105 hectares and its own washing station with a laboratory for anaerobic processing. Since its inception, the estate has focused on quality coffees. Initially, this was primarily related to producing coffees using the washed process, which is rare in Indonesia. Later, experimental processes were added to the mix. Thanks to the experience of the Mustofa and Mustikaningtyas couple and continuous investment in infrastructure, these coffees are always of the highest standard.ROASTER'S OPINIONThis is our first washed bean from Indonesia. The cherries first undergo a 48 to 60-hour anaerobic fermentation, bringing intense character to the profile. The whole cherries are then dried in the sun on covered raised beds - ""Marquesina"" - until they reach 30% moisture. Then, the cherries are moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve 18%-16% moisture. After a pre-stabilisation stall to intensify flavours, the drying process is completed until optimal moisture is achieved.
