COFFEE OF THE MONTH
FILTER OF THE MONTH: Hard Beans - Kolumbia Carambolo Estate Dual Fermentation Washed Process Filter 250g

Manufacturer: HARD BEANS

Roasting date: 17.11.2025

Whole-bean specialty coffee from Columbia roasted by Hard Beans from Poland.Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew brings the notes of peach, red currant and vanillia. Country: ColumbiaRegion: Pitalito, HuilaFarm: Finca Las Flores & Finca El DivisoVarietal: Tabi & Yellow ColombiaProcessing: Dual Fermentation Washed ProcessAltitude:1800 m n.p.m.Cupping score: 86,25 / 100ABOUT THE COFFEEThis coffee comes from two farms in the Huila region: Finca El Diviso, run by Nestor Lasso and his family, and Finca Las Flores, managed by Johan Vergara and the Vergara family. El Diviso sits at an elevation of 1,780–1,900 m a.s.l., while Las Flores is located at 1,700–1,790 m a.s.l. Both farms focus on experimental processing methods and cultivate a wide range of botanical varieties. This lot is a blend of the Tabi and Yellow Colombia varieties. The coffee undergoes double fermentation: first an aerobic stage, followed by anaerobic submerged fermentation aimed at enhancing stone-fruit notes. After fermentation, the coffee is subjected to a “thermal shock” using hot and cold water to minimize aroma loss and preserve the desired sensory profile. Drying begins naturally under cover, after which the coffee is finished mechanically in a silo. It then rests for at least 10 days before final milling.Coffees from Las Flores and El Diviso regularly appear in winning routines at Barista Championships—on the World Barista Championship stage (including the 2025 World Barista Champion) as well as in the Polish Barista Championship—further confirming their exceptional potential.ROASTER’S NOTENestor Lasso and Johan Vergara are pioneers of the new wave of Colombian coffee producers. Both farms (El Diviso and Las Flores) are truly impressive, and although I have visited them several times, each visit brought new solutions and innovations. When the result of their collaboration—Carambolo Estate—appeared on our cupping table, it was immediately clear that these beans would become this year’s filter coffee of December. No need to elaborate: it’s going to be fruity and sweet!COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. FILTER OF THE MONTH: HAYB - Uganda Norman Boozy Natural Filter 250g

Manufacturer: HAYB

Roasting date: 12.11.2025

Whole-bean specialty coffee from Uganda roasted by HAYB from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew brings the notes of blood orange, mango, papaya.Country: UgandaRegion: Mbale, Mount ElgonFarma: Norman BoozyOdmiana: Nyasaland, SL14, SL28Processing: NaturalAltitude: 1800 - 2200 m n.p.m.Cupping score: 87 / 100ABOUT THE COFFEEThis is only our second time working with coffees from Uganda. It’s not easy to find beans that match our taste preferences in a country roughly the size of the UK or Romania, but with a population density closer to that of the Netherlands or Poland. Uganda is relatively densely populated, and agriculture drives the economy—but most farmers grow Robusta. But rest assured, we managed to find a fruity bomb, a true gem.Norman’s farm is located at the foot of Mount Elgon in Uganda, sourcing cherries from the regions of Sironko, Mbale, Bulambuli, and Kapchorwa. The Coffee Yard is a large reception and drying center for coffee cherries. With almost 20 years of experience in the industry, Norman has specialized in natural-process coffees since 2018, continually refining his processing methods to achieve ideal flavor profiles. The processing steps include:• Selecting and washing cherries to remove defects.• Initial drying on raised beds.• Additional sorting by color and moisture content.• Fermentation in open tanks, which contributes to the coffee’s unique flavor notes.• Drying for about 21 days until moisture drops below 12%.After an additional week, the beans are hulled, hand-sorted and optically sorted, then prepared for export.ROASTER’S NOTEThis coffee truly surprised me! Another lesson showing that it’s worth exploring unknown paths, staying curious, and continuing to search. I haven’t had anything this juicy and tropical in a very long time.COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. They replied: absolutely not! They name their lots because the flavours often take them back to childhood memories and remind them of familiar tastes. This time the coffee was so fruity that the brothers agreed it tasted just like bubble gum. Extremely juicy, very sweet, tropical. And it’s a classic natural — no additives, just hard work!

Whole-bean specialty coffee from Costa Rica, roasted by the Polish roastery Kaizen. Medium roast, ideal for espresso machines and moka pots. In the cup, you’ll find tasting notes of rum, strawberry and fig.Country: Costa RicaRegion: West ValleyFarm: Reina ElizabethVarietal: SarchimorProcessing: Black HoneyAltitude: 1450 - 1550 m n.p.m.About the coffee from the producer:Another KAIZEN barrel-aged coffee is the result of a local collaboration with Kojder Winery, located just 30 km from Szczecin. We placed green coffee beans from Costa Rica – Marvin Barrantes in a French oak barrel that first held Cabernet Cortis wine, and was later used to age Johanniter brandy for two years. As a result, we obtained a coffee that has absorbed rich, boozy notes — the profile reveals rum, strawberry, and fig.About the farmThe mill began operating in 2012 with a small depulping machine and a few African drying beds, where all the coffee was 100% sun-dried. The first single varieties Marvin experimented with were Caturra and Millennium. The mill, named “Reina Elizabeth,” pays tribute to the farm’s previous owner, Elisa Alfaro Hidalgo (1928–2016), who was Marvin’s mother. Doña Elisa had strikingly blue eyes, which led locals in San Luis to claim that only a queen could have such eyes—hence the nickname “Reina Elizabeth.” In addition to her remarkable eyes, her kindness and the farm’s specialty coffee were also truly royal.
