The cup is filled with notes of currants, vanilla and tea.Country: BurundiRegion: YandaroProcessing: Fully washedVarietal: Red BourbonCupping score: 87 / 100Altitude: 1800 m a.s.l.ABOUT THE COFFEEYandaro is located in the valley of the river of the same name, not far from the Kibira rainforest – a natural reservoir of water and nutrients for the surrounding crops. The station works with 2,341 smallholder farmers from 22 nearby hills. Each farmer owns on average around 250 trees. In Burundi, coffee is typically grown on micro-farms, often in small plots next to family homes. The coffee cherries arrive at the station on the day of harvest, where they undergo water flotation sorting, hand selection, and classic washed processing. Fermentation in clean water lasts 10–12 hours, after which the coffee is thoroughly washed and dried on raised beds for 2–3 weeks. Each lot remains fully traceable. The result in the cup is a clean, elegant profile typical of high-altitude Burundi coffees: red currant, vanilla, and black tea.A sweet, clear coffee with a tea-like structure and juicy acidity. Ideal for pour-over brewing methods as well as a light, fruit-forward espresso.Burundi remains one of Africa’s most underrated origins, and Yandaro shows exactly why it is increasingly appearing on the map of the world’s best specialty coffees.

Finca El Llano belongs to the Perez family and is located in the prestigious Acatenango region, in the Chimaltenango department, in the heart of Guatemala’s volcanic mountain chain. It is here, in the shadow of volcanoes and under the influence of breezes from the Pacific Ocean, that coffees of remarkable depth and elegance are produced. The name El Llano means “the plain” in Spanish, and the name is no coincidence. The farm covers an area of around 10 hectares, creating ideal conditions for the stable and sustainable development of coffee plants.Raul Perez, the main caretaker of the farm, has been steadily developing his plantation for years, introducing new coffee varieties with greater resilience and improved quality potential. His goal is not only to produce outstanding specialty coffee, but also to create a model farm based on the principles of regenerative agriculture.Raul actively seeks ways to reduce or completely eliminate artificial fertilizers, focusing on maintaining ecosystem balance and the long-term fertility of the soil. His work aims to inspire other producers in the Acatenango region and contribute to a more sustainable future for coffee cultivation in Guatemala.

Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The cup is filled with notes of grapes, rum and hazelnut.Country: NicaraguaRegion: Nueva SegoviaFarm: Bridazul Processing: Carbonic MacerationVarietal: Caturra, CatuaiCupping score: 88 / 100Altitude: 1650 m a.s.l.ABOUT THE FARMBridazul is not a single plantation but rather a mill and drying station located just outside the city of Ocotal in the Nueva Segovia region of Nicaragua. From the very beginning, Bridazul has acted as a link between farmers and roasters. Producers deliver their coffee cherries here, while the Bridazul team handles processing, quality control, and matching coffees with the right buyers without ever taking ownership of the raw product. This allows small farmers to focus on cultivation, while buyers gain access to unique microlots that might otherwise never leave the region. What sets this place apart is its exceptionally advanced approach to fermentation and drying. Years of collecting data, testing temperatures, fermentation times, and slow drying techniques have given Bridazul a far wider range of processing methods than most standard mills in the region. Processes here are designed with a specific flavor profile in mind rather than maximum efficiency.Little Red Riding Hood is an example of this approach. In 2020, Tim Willems from Bridazul noticed that several experimental batches were too small to export individually. Instead of discarding them, they were combined into a cohesive whole. This decision led to the creation of the Bridazul Blends line, and with it, this particular composition.ABOUT THE COFFEEThe coffee comes from several farms around Dipilto and Mozonte, including El Avion, Los Pirineos, and La Bendición, located at elevations between 1400 and 1650 meters above sea level. The blend features the Caturra and Catuai varieties and undergoes Carbonic Maceration fermentation. The cherries ferment briefly in small batches under controlled conditions to highlight fresh, fruit-forward notes. They are then dried on shaded African beds, spread in thin layers to preserve fruit intensity and maintain a clean, elegant cup structure.Bridazul and Little Red Riding Hood demonstrate how technology, experience, and collaboration with local farmers can create a coffee that is not a random blend but a thoughtfully crafted story captured in a cup.

Flavor notes: wild strawberry, mango, jasmine.Origin: GuatemalaRegion: FraijanesFarm: Fredy OrantesVariety: SidraProcessing: NaturalAltitude: 1870 m a.s.l.Cupping score: 89 / 100THE CUPThis Sidra has a profile with both abundant fruit and elegant florals. When brewing, aromas of jasmine, chamomile and wild berries come first. Notes of mango, raspberry, and lemon follow, with a lingering, sweet finish like vanilla and creamy butterscotch.ABOUT THE FARMClose to the capital - Guatemala City - this is one of our favourite Guatemalan coffees of the season. Fredy Orantes is a true leader among the coffee growers in the town of Santa Rosa, and has worked tirelessly to maintain high standards in the field and during the harvest in order to produce the best possible coffees. Fredy is an expert with both larger lots and small microlots, and every aspect of coffee picking and processing is done with care in order to ensure top quality. Fredy is always thinking about sustainability on the farm. He actively cares for the variety of trees on the farm - grevillea and cuje are the most numerous but he also maintains other types of fruit trees and native trees. The soil is carefully maintained, and soil management includes the application of organic materials that have been composted such as fallen leaves and branches as well as coffee pulp. A variety of native animals and birds appear on the farm, and Fredy explains that the farm is not even fenced in; as in nature these creatures can come and go as they please. Fredy loves experimenting with different varieties and processes, and this lot is the perfect example of his efforts. He added about 1 hectare of Pacamara plants to his farm in 2019, and they have begun producing the large, red fruit for this lot.THE PROCESSAfter a very careful picking, with workers choosing only the ripest cherries, the coffee is placed into clean sacks for a fermentation of about 48 hours. When this fermentation period is over, Fredy adds the coffee to his raised beds, positioned to take advantage of the abundant sunlight of Fraijanes. The coffee dries on these beds for 22 days, with frequent turning to encourage thorough and consistent drying.

The average farm is one hectare, 80% of producers within northern Sumatra are women, and 95% of producers are smallholders. The region is diverse, geographically speaking. It is surrounded by beaches with a swampy inland, and the Barisan Mountains make up the inner two-thirds of the area. Coffee is grown on this volcanic mountain amongst the rainforest. One of the notable features of this area is Lake Taboa, the largest volcanic lake in the world.THE PROCESSHistorically, Indonesian coffee producers have implemented the wet hull method but recent years we have witnessed a shift towards modern specialty techniques which deliver exciting new profiles. This lot was naturally processed, with whole cherries placed on covered beds in greenhouses.ROASTER'S OPINIONThe Asman Gayo Mill works with smallholders in the Sumatran region of Aceh. This distinct coffee is perfect for lovers of vibrant natural processing - the creamy tropical notes remind us of a piña colada!

The cup is filled with notes of chocolate, almonds and red fruits.Country: ColombiaRegion: GaitaniaProcessing: WashedVarietal: Caturra, CastilloCupping score: 85 / 100 Colombia La Roma is a specialty coffee from the Gaitania region in Tolima, an area considered the cradle of Colombian coffee. It is also a region with a difficult history, where despite many challenges local producers continue to develop and cultivate coffee of the highest quality. This lot was produced as part of the Black Condor Project – an initiative supporting more than 100 independent farmers through fair pricing, training, and access to modern processing infrastructure. The project is led by Emmanuel, a producer raised in a family with a multi-generational coffee tradition. In 2016, together with his family, he established a central processing station to help farmers from more than 15 nearby villages process their coffee in a controlled, quality-focused way. This approach allows for a consistent and clean sensory profile while also significantly increasing the income of the local community. Farmers are offered prices up to 18–20% higher than the market average, and regular workshops on fermentation, drying, and cupping help continuously improve production standards.ABOUT COFFEEColombia La Roma undergoes a classic washed process, which highlights the natural clarity and elegance of Colombian varieties such as Caturra and Castillo. Careful cherry selection, controlled fermentation, and slow drying contribute to a balanced and harmonious flavor profile. In the cup, this coffee offers notes of chocolate and almonds that create a sweet, creamy base. These are complemented by hints of red fruits, bringing freshness and a delicate fruity acidity. The cup is smooth and velvety, with a pleasant, lingering finish. It is an exceptionally versatile coffee that works beautifully as espresso, where its chocolate-nut depth stands out, and equally well in filter methods, where its fruitier and more complex character becomes more pronounced.Colombia La Roma from the KAFAR roastery is an example of classic Colombian specialty coffee – balanced, elegant, and full of character, while also representing the story of the people who are building the future of their communities through coffee.

Grown by smallholder farmers united under the Coffee Gardens initiative, it is produced with a focus on quality, sustainability, and building direct relationships between farmers and roasters. This slow and gentle process brings out maximum clarity in the cup and highlights the coffee’s natural fruit notes. Before export, the coffee is sorted through as many as 12 stages, ensuring the highest level of bean selection. In the cup, Uganda Zebigi presents a harmonious and elegant profile. Notes of juicy apple and sweet grapes are clearly noticeable, followed by a subtle, creamy vanilla. The coffee has a bright yet pleasant acidity, a light to medium body, and a clean, lingering finish. (Rinsing the filter with water is not necessary.)Grind the coffee and add it to the Aeropress, leveling the bed of coffee.Pour 50 g of water in a high stream, give it a strong swirl, and wait 1 minute. At 1:00, start pouring the remaining water up to 230 g using the thickest stream possible with circular movements.Immediately remove the Aeropress from the scale, gently press the plunger about 1 cm in and break the crust by swirling the Aeropress (hold the plunger so pressure doesn’t push it out!).At 3:00, begin pressing slowly until you hear a hissing sound. Paloma - Colombia Santa Monica Lychee Honey/Anaerobic Filter 200 g

Manufacturer: PALOMA

Roasting date: 06.03.2026

Specialty-grade whole-bean coffee from Colombia, roasted by the Polish roastery Paloma. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of lychee, strawberry, caramel and vanilla.Origin: ColomiaRegion: QuindíoFarm: Santa MonicaProcessing method: Anaerobic honey process co-fermented with lychee and wine yeast.Variety: Pink BourbonAltitude: 1450 - 1500 m a.s.l.Cupping score: 89 / 100ABOUT THE COFFEEIn this experimental honey process with the addition of wine yeast and fresh lychee, fermentation plays a key role in building flavor complexity. Wine yeast efficiently converts sugars into alcohol and aromatic compounds, helping break down the mucilage and release more organic acids as well as compounds responsible for the depth and intensity of the flavor profile. After 72 hours of anaerobic fermentation with the fruit pulp, the cherries are depulped. The skin is removed, but the sticky “honey” layer remains on the bean, giving the coffee natural sweetness and a fuller body. The beans are then moved to concrete patios, where they are dried in thin layers and regularly turned to ensure even drying and to prevent over-fermentation or mold. The drying process continues until the ideal moisture content of 9.5–11% is reached. The result in the cup is an intensely aromatic, juicy coffee with clear floral and lychee notes, hints of grapes, a delicate fermenty sparkle, and a long nectar-like finish.ROASTER’S NOTECan’t beat them? Join them. For some people this co-ferment is a revelation, a grimace, a guilty pleasure, a self-gift, an unreasonable financial decision, and for the less refined, simply a reason to hate. And somehow all of that is fine. It’s such a massive fruit bomb that we probably should add a warning pictogram. I won’t even describe the profile because people will say I’m making it up.V60 RECIPECoffee dose – 19 gWater dose – 50 g → 300 gWater temperature – 88–90°CGrind size: 8.4 EK43; 23 clicks ComandantePlace the filter in the V60 and rinse it with a strong stream of water so it adheres well to the walls.Grind the coffee, add it to the V60, and level the coffee bed.Pour 50 g of water, aiming at the dry spots to wet everything thoroughly. If the coffee is very fresh (foaming strongly when it contacts water), you can extend the bloom to 2 minutes or add an additional bloom at 1:00 (pour another 50 g and wait until 2:00).At 1:00 (or 2:00), begin pouring into the center of the V60 (circles about the size of a 5-złoty coin), using circular movements at a pace of 6–8 g per second (slightly below the second enlarged dot on the Acai kettle), keeping the stream just below the point where it breaks. When you reach 250 g, lower the kettle to about 3 cm above the water surface (no need for circular movements anymore) and finish pouring to 300 g.Perform a shake while holding the narrowing at the base of the V60 (both horizontally and vertically). If the coffee drains too quickly, give it a swirl. The total brew time should be 2:30–3:00, or 3:30–4:00 with the extended/additional bloom. Try blooming with 70–80°C water, or pour off part of the bloom water. You’ll notice a big difference, so experiment.
