Their farm, Fazenda São Felipe is located close to the city of Franca, in the Alta Mogiana region. Following her studies and time in the city, Vanessa returned to the family farm 5 years ago, with a desire to reconnect with nature and have a lasting impact on the environment and how things are done at the estate. Alongside her mother, Vanessa is leading all agricultural practices at the farm. Together, they have invested heavily in regenerative technologies. They have focused on reforestation at the estate and conserving water, bringing back the biodiversity that would have existed before the land was intensively farmed. During cultivation, all inputs with negative impact are decreased to a minimum and soil and plant health are actively restored.ABOUT THE PROCESSThis lot underwent fermentation for 40 hours: the whole cherries are sorted and cleaned, before being placed in a sealed anaerobic environment. The fermented cherries were then dried on patios with the whole outside cherry intact. The high altitude of the area favors the production of high-quality coffees. The processing at Bulambuli is carried out by specialized staff who ensure precise and controlled conditions throughout the entire process.The region primarily grows the SL14, SL28, and SL34 varieties, which are also characteristic of Kenya. The cherries come from small family farms with an area of less than 1 hectare. These farms are located in parishes—local administrative communities consisting of 7 to 12 villages, often with as few as 200 inhabitants. Farmers typically work in groups led by a designated leader.The harvest of East Ugandan coffee takes place from August to January. In lower-lying areas, the season falls between August and October, while at higher altitudes, it lasts from September to January. Farmers sell their cherries at small collection points or deliver them directly to the washing station. Fazenda Mundo Novo is not just a random address on the map, but a place with a clearly established work standard.Although the farm's name is Mundo Novo (also the name of a botanical variety), the variety of this specific lot is Yellow Catucaí. It is valued for its sweetness, good structure, and a clean, organized sensory profile.This is a natural process managed with great control. The cherries were hand-picked at the optimal moment of ripeness and then spread in a thin layer on the patio that same day to begin drying. After several days, the coffee was moved to a dryer, where it finished drying slowly at a temperature of 40–45°C, which allowed for the preservation of profile clarity and good flavor intensity.RECIPERatio: 60 g of coffee per 1 liter of water. Water temperature: 93°C. Grind: medium-coarse. Brewing time: 3:30 minutes. In the case of this coffee, it also serves to highlight the role women play across the entire coffee value chain.In the cup, this year’s harvest is defined above all by sweetness. The profile is fruity, though closer to dark and dried fruits. Notes of plum appear first, followed by dried apricot and raisins. To round out this wave of sweetness, the whole profile feels as if the fruits had been drizzled with buckwheat honey.
