In practice, this means one thing: the raw material is predictable, clean, and produced to meet the highest standards.This is a deliberate combination of two varieties. Tabi brings structure and elegance, often expressed as a more tea-like clarity and a stable, citrus-fruit acidity, while Yellow Colombia adds sweetness and juicy, ripe fruit character.Formally, this is a washed coffee, but processed in a way that strongly shapes the flavor profile. First, the fermentation is two-stage: an initial aerobic phase, followed by anaerobic submersion, designed to emphasize stone fruit notes (peach, apricot) rather than heavy, wine-like flavors. Second, after fermentation the coffee undergoes controlled hot/cold quenching, meaning contact with hot and cold water to stop the process at the right moment and preserve aromatic clarity. The dry, sunny conditions of Cerrado favor a clean, chocolate-forward profile with pronounced sweetness, while the slower drying on raised beds in the more humid microclimate of Rancho Grande creates greater complexity with notes of nuts and dried fruits.After import to Europe, some of the beans were decaffeinated using the supercritical CO₂ method, which effectively reduces caffeine with minimal impact on aroma and structure, allowing LOW Brownie to retain its full, balanced character. In the cup, chocolate and nuts dominate, with a delicate hint of dried fruits, high sweetness, medium body, low acidity, and a long, chocolate finish.We also verified the caffeine level in the final brew prepared according to the standardized V60 recipe. In 250 g of brewed coffee, we measured 54.4 mg of caffeine. Compared to the same coffee in its fully caffeinated version, this represents a real reduction of about 70% in caffeine content in the brewed coffee.ROASTER'S OPINIONThis coffee has a consistent chocolate-nut character, enriched with a subtle hint of dried fruits that gently highlight the flavor, reminiscent of classic brownies. It is distinguished by pronounced sweetness, medium fullness, very low acidity, and aromas of cocoa and chocolate. The whole is completed by a long, chocolate finish and excellent balance. This is how LOW Brownie – our reduced-caffeine coffee – presents itself.

The plantation belongs to the Los Naranjos group, led by Sigfredo Corado, a retired agronomy professor from the National School of Agriculture. It is also part of the Renacer Program – a field school for coffee producers in the region, aimed at imparting knowledge on better crop management practices.Sigfredo, together with a team of six technicians, runs the field school. The program supports small and medium-sized producers from the area, offering training on best agricultural practices that promote soil and land regeneration while improving yields and coffee quality. The school operates at Finca Noruega, where classes are held twice a month. The curriculum focuses on a soil health program based on the principles of "right source, right dose, right place, and right time."Since 2021, the program has involved 60 participants who work on experimental plots. This is quite rare in a country where most coffees are typically blends from many small farms.Ngoma CWS (co-owned by MIG Coffee and CBC) chose an anaerobic natural process to further highlight the potential of this lot. The cherries fermented for about 12 days (around 300 hours) under controlled conditions and were then slowly dried on raised beds for 35 days until reaching 12% moisture.The result? A deep, intense profile with notes of maple syrup, red wine, and dried dates, a dense texture, and a long, liqueur-like finish.Today, Rwanda is one of the strongest origins in the specialty coffee world, a country built on the work of more than 400,000 small producers, where quality and transparency increasingly go hand in hand with real support for farmers.Perfect for pour-over brewing methods as well as bold, wine-like espresso.A limited lot from Nyamasheke, created for fans of intense, fermented naturals.

We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. At some point his mom’s little SUV simply couldn’t make it any further, so Hellen drove down in her big pickup truck and towed us the rest of the way up.First she fed us, then she showed us the farm and told us its story. After the walk she prepared a cupping where she presented eight of her coffees. A cupping in the kitchen while rice and beans are cooking right next to you? Why not.The coffees were phenomenal. And that Geisha? That’s the coffee that’s been appearing in my dreams ever since I came back from Costa Rica. Lots of tropical fruit, but without the kind of fermentation often associated with coffees from this country. Notes of banana and pineapple, plenty of red, sweet wine, currants, and everything beautifully structured and right where it should be.I’m very happy that we’re also presenting such an exceptional coffee as an espresso. It’s the essence of that trip in a cup: sweetness, tropical fruit, bright acidity supported by deep sweetness. One of the warmest memories from that journey returns every time we roast and brew this coffee. I invite you to join me on this trip.

From the very beginning, Bridazul has acted as a link between farmers and roasters. Producers deliver their coffee cherries here, while the Bridazul team handles processing, quality control, and matching coffees with the right buyers without ever taking ownership of the raw product.This allows small farmers to focus on cultivation, while buyers gain access to unique microlots that might otherwise never leave the region.What sets this place apart is its exceptionally advanced approach to fermentation and drying. Years of collecting data, testing temperatures, fermentation times, and slow drying techniques have given Bridazul a far wider range of processing methods than most standard mills in the region. Processes here are designed with a specific flavor profile in mind rather than maximum efficiency.Little Red Riding Hood is an example of this approach. In 2020, Tim Willems from Bridazul noticed that several experimental batches were too small to export individually. Instead of discarding them, they were combined into a cohesive whole. This decision led to the creation of the Bridazul Blends line, and with it, this particular composition.ABOUT THE COFFEEThe coffee comes from several farms around Dipilto and Mozonte, including El Avion, Los Pirineos, and La Bendición, located at elevations between 1400 and 1650 meters above sea level. The blend features the Caturra and Catuai varieties and undergoes Carbonic Maceration fermentation.The cherries ferment briefly in small batches under controlled conditions to highlight fresh, fruit-forward notes. They are then dried on shaded African beds, spread in thin layers to preserve fruit intensity and maintain a clean, elegant cup structure.Bridazul and Little Red Riding Hood demonstrate how technology, experience, and collaboration with local farmers can create a coffee that is not a random blend but a thoughtfully crafted story captured in a cup.
