Skilled pickers—around seven per hectare at peak—move through the farm every two to three weeks, selecting only the deep red, fully ripe cherries. After picking, the cherries undergo Balceo, a water separation process that removes unripe or defective fruit.From the farm, the cherries travel in a refrigerated truck operated by Área 18, arriving at Banexport’s processing facility in Popayán within 24 hours. The crates remain cool and well-ventilated to slow microbial activity and prevent unwanted fermentation.At the mill, each lot is weighed, registered, and sampled. A 1-kg sample undergoes detailed analysis to determine the best processing method; for this particular lot, a Washed process was chosen. After cleaning and sorting, the fruit is pulped and the beans are moved into a stainless-steel bioreactor equipped with full environmental controls-oxygen flow, temperature, pH, °Bx, and pressure. Pink Bourbon thrives here: an oxygen-rich environment encourages the natural yeast strains of the variety to multiply, creating aromatic precursors that bring out its floral and fruity character. After 48 hours, the coffee is washed three times.These controlled microbial shifts shape the sensory profile of the coffee, accentuating the bright, delicate, and complex attributes that Pink Bourbon is known for.Drying is one of Cauca’s greatest challenges. Unlike the long dry seasons of Africa, humidity here often exceeds 60–80%, and annual rainfall can surpass 1,000 mm. To overcome this, Área 18 uses electric dehydrators that combine heat, cold air, and dehumidification. Their intelligent control system runs continuously, allowing the coffee to dry evenly in just two days without compromising flavor.Once dried, the coffee rests in fique bags lined with GrainPro for 15 days, stabilizing moisture and ensuring uniform quality before export.

During the harvest season, approximately 1,200 local farmers deliver their coffee cherries to the station.Our coffee lot comes from the special Malebo Project. It is a coffee produced by the Idido station, available exclusively to the importer Cafe Imports, for which only Grade 1 beans from the Idido area were selected. It was the only coffee from Idido in that season to undergo washed processing. Part of the proceeds from the Malebo Project is donated to support the local orphanage, Ardent Children Center.

Coffee here is most often processed using the natural or honey method, and experiments with aerobic fermentation are also common.Fun fact: Our coffee lot was delivered to the station on the very day of harvest. Its parameters were then evaluated, and the cherries were placed in large hermetic tanks for 5 days of anaerobic fermentation. At the appropriate moment, the coffee is exposed to a temperature of 20°C to halt fermentation and remove yeast. The cherries then “mature” in the tanks for another 5 days before being transferred to solar dryers. Drying takes 30 to 45 days.

Nearly four decades ago he started with hard labor at a processing station—milling, sorting, drying—where he learned the foundations of coffee processing. Today he runs his own farm, El Renacer, where every step of processing is dialed in to perfection.I chose a Colombian SL28, a super fruity and vibrant variety that already promises a party for your taste buds. On top of that, we add ginger co-fermentation. In short: we prepare microbes (Lactobacillus and Saccharomyces), feed them ginger and a bit of panela (a fancy kind of sugar), add freshly harvested cherries, and let everything ferment for 72 hours. After fermentation and depulping, the coffee is dried until it reaches ideal moisture and stability.So what does it taste like, my friend? A total flavor festival. The co-ferment takes center stage, but in the background you’ll find mandarin, lemongrass, high sweetness, and lots of citrus notes. Pour-over, espresso, or moka pot—it always turns out great.ROASTER’S OPINIONThe famous El Renacer farm + SL28 + ginger = TOTAL JINGLE BELLS!!! What more is there to say—first co-ferment, check. An ultra-fresh, spicy-citrus coffee. Ginger leads the way, obviously, but there’s much more going on: mandarin, lemongrass, high sweetness, and a ton of citrus. And as a bonus—no matter how you brew it, it always comes out great.

It has operated continuously since 1954, combining decades of tradition with extensive experience in producing top-quality coffee.The mill processes coffee cherries delivered by approximately 1,000 smallholder farmers, who together produce close to 2,500 tons of coffee annually. Many farmers practice intercropping, growing coffee alongside bananas and maize, which improves soil fertility and supports local biodiversity. Coffee pulp residues from processing are composted and reused as natural fertilizer, promoting sustainable and environmentally friendly farming methods.Thanks to a harmonious blend of traditional practices, modern processing techniques, and strong environmental stewardship, Gitare produces coffees with a distinctive character and a rich, multidimensional flavor profile, highly regarded on international markets.PROCESSINGThe first stage of processing is fermentation lasting approximately 24 hours. The beans are then thoroughly washed and transferred to a second fermentation tank for an additional 12–24 hours. After this stage, they pass through washing channels where lighter beans (so-called floaters) are separated, while the heavier beans are cleaned of remaining pulp.Following washing, the beans are soaked in water tanks for up to 24 hours. This stage encourages the development of amino acids and proteins, resulting in higher acidity and greater complexity of fruity notes—hallmark characteristics of Kenyan coffees.At the final stage, the beans are dried on African raised beds. Initially, they are spread in a thin layer to quickly remove about 50% of the moisture within roughly 6 hours. They are then piled more thickly and dried for an additional 5–10 days. The dried parchment coffee is delivered to the dry mill and later stored in ventilated warehouses, where it rests until it reaches a moisture content of approximately 11%.ROASTER’S OPINIONKenya Gitare presents a classic flavor profile characteristic of the Kiambu terroir. The coffee features well-developed, medium and complex acidity, balanced by high sweetness and a full, pronounced body. The aroma reveals notes of currants, candied fruit, and delicate floral accents.On the palate, blackcurrants and oranges dominate, complemented by the sweetness of candied fruits. The cup is harmonious and exceptionally well-balanced, with pleasant medium acidity and clear sweetness. The finish is long, clean, distinctly currant-forward, and deeply satisfying. A superb example of a classic coffee from the Kiambu region.BREW RECIPEThe sweetness and rich aroma of this coffee make it very easy to brew, with results that are usually close to expectations.
