Located in Fresno, Tolima, they started as an avocado farm. In 2012 both brothers saw the opportunity to utilise their land to grow specialty coffee. Situated on the slopes of the snowcapped Nevado del Ruiz volcano, the farm benefits from a unique microclimate. Starting with Caturra and Castillo, it was not long before they started expanding their collection of varietals to fully explore the amazing terroir at their disposal. Soon, they were planting Tabi, Pink Bourbon, Pacamara, and Gesha, to name a few. Through experimentation and collaboration, the Bayter family have sought to discover new expressions of Colombia flavour and are renowned for their adaptation of modern processing techniques.THE PROCESSGuava Banana coffee begins with the careful selection of ripe Red and Yellow Caturra cherries. The cherries first undergo a 48 to 60-hour anaerobic fermentation, bringing intense character to the profile. The whole cherries are then dried in the sun on covered raised beds - ""Marquesina"" - until they reach 30% moisture. Then, the cherries are moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve 18%-16% moisture. After a pre-stabilisation stall to intensify flavours, the drying process is completed until optimal moisture is achieved. The beans are then stabilised for 45 days in GrainPro bags, ensuring consistency and quality.Store in a cold and dry space.

Thanks to the proximity of the station, none of the local farmers have to transport their cherries for longer than 40 minutes, which allows them to maintain their freshness before processing begins.SNAP Coffee, an Ethiopian exporter, was founded in Addis Ababa in 2008 by Negusse D. Weldyes. The company operates three processing stations in the Chelelektu region in the Kochere district (Gedeo zone) and also cooperates with stations in Uraga (Guji) and Nensebo (West Arsi). Each of them serves an average of about 550 farmers. SNAP Coffee bases its operations on three pillars: consistently maintaining the high quality of specialty segment coffees, sharing knowledge and training in coffee processing and cleaning, and implementing waste recycling systems to protect the environment.ROASTER'S OPINIONWe don't have favorites among our coffees…...but Ethiopia Chelbesa is the closest to being the one we would point to. If we had a "Roaster's Choice" category, it would definitely be there. We had beans from the Chelbesa washing station in our roastery for the first time in 2021. To say we liked them is an understatement. We remembered them long after they were gone. This is what we love about Ethiopias – distinct peach, flowers, and herbs. Plus a deep sweetness. This year we bought twice as much of it as last year, and we assume this trend will continue next year.Store in a dry and cool place.
