The president of Lima Coffee is Rony Lavan, who is responsible, among other things, for finding the most interesting coffees from small producers. Fun fact: Cajamarca is a relatively dry and cool tropical region located in the north-eastern highlands of Peru, characterized by very fertile soil at high Andean elevations. All of these factors contribute to the developing production of specialty coffee. Cajamarca is the main coffee-growing region in Peru, accounting for about 25% of national production. Small-scale producers own approximately 2-3 hectares of arable land, and many of them practice organic farming methods.COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. Hi! Coffeedesk - Good Chief Filter 250 g

Manufacturer: HI! COFFEEDESK

Roasting date: 19.05.2026

Whole-bean specialty coffee from. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of almond, caramel and red apple.Origin: ColombiaRegion: Palestina, Huila Farm: CADEFIHUILAVariety: Caturra, TabiProcessing: WashedAltitude: 1700 m a.s.l.ABOUT THE REGION AND THE FARMThe municipality of Palestina is a unique place: it is called the "water and forest factory" of the Huila region. It is characterized by two types of climate: cold and temperate, and coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes. Our coffee comes from a selected group of producers from the upper part of the municipality of Palestina, located at an altitude of approximately 1700 meters above sea level. This group of farmers has specialized in cultivating varieties such as Tabi and Caturra. Cooperativa Departamental de Caficultores del Huila Ltda. CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. Its reach covers 27 municipalities, where a support network operates consisting of 45 coffee purchase points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 points offering drying services. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialized coffees allows the cooperative to meet market demand for coffee purchased under specific conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, especially in Central America, where it was introduced into cultivation in the 1940s. This variety also played a significant role in breeding coffee plants resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. Tabi is a relatively young variety, created in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid variety. The word "Tabi" comes from the language of the indigenous people of Colombia and means "peace" or "life".ABOUT THE PROCESSINGThe coffee undergoes a traditional washing process, which begins with harvesting ripe cherries, weighing them, and leaving them for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after about 12 hours. Finally, the coffee is dried in the sun or mechanically, depending on the producer's capabilities.Store in a dry and cool place.

Hi! Coffeedesk - Mad Jungle Filter 250 g

Manufacturer: HI! COFFEEDESK

Roasting date: 02.06.2026

Whole-bean specialty coffee from Uganda, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of cherry, blueberry, dried fruits, spices, rum and alcohol finish.Origin: UgandaRegion: Rwenzori, Western RegionFarm: Nyabirongo / Agri EvolveVariety: SL14, SL28Processing: NaturalAltitude: 1600–2200 m a.s.l.ABOUT THE COFFEENyabirongo is located on the southern slopes of the Rwenzori Mountains in western Uganda. It is an important point for local producers from the Bakonzo people and, at the same time, a quality hub for Agri Evolve, a company that has been working with farmers in the region since 2018. The facility in Nyabirongo has been operating since 2022 and combines both a wet and dry mill, ensuring that quality control covers the entire journey from receiving the cherries to preparing the green coffee for export. This lot is a natural. Ripe cherries are hand-picked, sorted through flotation, and then sealed in fermentation tanks. After fermentation, the coffee is dried in thin layers, and later hulled and sorted. The result? Plenty of fruit, high sweetness, and that characteristic, slightly rum-like finish. A coffee with character. No pretending.ROASTER'S OPINIONThis is Uganda on the darker, more fruity side of the force. It is not "polite." It is sweet and fermenty, with cherry and blueberry at the forefront. It works best as a filter coffee for people who like coffees with a strong processing profile but without a heavy, muddy body. Plenty of flavor. Very little boredom.Store in a dry and cool place.

HAYB - Birthday Coffee Colombia Los Nogales Chocoberry Natural Filter 200 g

Manufacturer: HAYB

Roasting date: 25.06.2026

Specialty-grade whole bean coffee from Colombia, roasted by the Warsaw-based roastery HAYB. Light roast, ideal for filter coffee makers, drippers, Chemex, AeroPress, French Press, and other alternative brewing methods. The flavor profile features notes of strawberry, raspberry and milk chocolate.Country of origin: ColombiaRegion: Bruselas, HuilaVariety: Pink BourbonProcessing method: Chocoberry NaturalCupping score: 88 / 100Altitude: 1600 -2000 m a.s.l.ABOUT THE PROCESSThe farmer himself, Oscar Hernandez, named this processing method this way because the final taste of the brewed coffee reminded him of something right on the borderline between chocolate and currants. How did it happen? Hand-picked cherries – nothing unusual. But then – SHOCK. Thermal! The cherries were submerged in water at a temperature of 180°F (80°C) for 30 to 60 seconds. Next, the fruits were washed and underwent ozonation. The seeds were extracted, and the juicy experimenting began. Juice was squeezed from the skins of still-fresh cascara. The juice was mixed with the beans in fermentation barrels. With the help of the necessary microorganisms, the beans underwent lactic fermentation for 220 hours. After that, just 20 days of drying, and there you have it.Reading this description, you might think it would turn into pickled cucumbers, or at least kombucha. Nothing of the sort. It is sweet, juicy, and crisp. Yum.Store in a cold and dry space.

Whole-bean specialty coffee from Kenya. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of black currants, grapefruit, red currant, tea and brown sugar.Origin: KenyaRegion: KirinyagaFarm: Kiamutuira Washing Station / Mutira Cooperative SocietyVariety: SL28, SL34, BatianProcessing: WashedAltitude: 1650–1700 m a.s.l.ABOUT THE FARMKiamutuira is a factory (washing station) in the Kirinyaga region, belonging to the Mutira Cooperative Society. The factory itself has been operating since 1996, and the cooperative has been a part of Kenyan coffee history since 1951. The coffee comes from approximately 600 smallholders, with the average farm measuring just 0.1 ha. Small scale. Great precision. The crops are situated at an altitude of 1,650–1,700 meters above sea level, near the forest boundary of Mount Kenya. The soils are volcanic, and macadamia trees appear among the shade trees. Tea is also grown in the region, which reflects the climate of the area well: high, green, humid, with excellent conditions for the slow ripening of cherries. The coffee is processed using the washed method, so we expect cleanliness, high acidity, and classic Kenyan juiciness.ROASTER'S OPINIONThis is Kenya in a good, precise style. High acidity, plenty of juiciness, a clean profile, and that exact character you look for in Kirinyaga. Blackcurrant, citrus, tea. Zero randomness. A coffee like this does not need stories about magic. It needs a good recipe.Store in a dry and cool place.

Specialty-grade whole-bean coffee from Ethiopia, roasted by the Polish roastery Paloma. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of lemon, white flowers, raspberry and sugar.Origin: EthiopiaRegion: Oromia, GujiProcessing method: WashedVariety: HeirloomAltitude: 1900 - 2100 m a.s.l.Cupping score: 85 / 100This coffee comes from various farms located in the Guji, Sidamo, and Yirgacheffe regions of Ethiopia:Guji Region is located in the southern part of the country, in the Oromia region. Until recently, it was administratively part of Sidamo, but it now functions as a distinct coffee region. The area is largely forested and offers excellent conditions for growing Arabica. Coffee trees grow here at altitudes above 1,500 meters above sea level, in fertile, well-drained soils of volcanic origin that require little fertilization. The climate is warm but moderated by the altitude, with annual rainfall of 1,500–2,500 mm spread over about nine months. Temperatures usually remain within the range of 15 to 24°C. Over the past few decades, Guji has established its position as one of the most recognized and valued coffee-producing regions in Ethiopia.Sidamo is recognized as the largest coffee region in Ethiopia. It encompasses the fertile highlands located south of Lake Awasa in the Rift Valley. Crops are situated at altitudes ranging from 1,500 to 2,200 meters above sea level, which promotes slower ripening of the coffee cherries in a cooler climate. As a result, coffees from this region stand out with their natural sweetness and pleasant acidity. Highly fertile soils and annual rainfall of 1,200 to 2,000 mm create ideal conditions for growing high-quality coffee.Yirgacheffe lies in the central part of the Gedeo zone in southwestern Ethiopia. This region is famous for producing coffees of exceptional quality, which is influenced by fertile soils, a tropical climate, and high-altitude plantations, often exceeding 2,000 meters above sea level. Due to the altitude of the crops, local coffees are classified as SHG (Strictly High Grown) or SHB (Strictly Hard Bean). This means that the cherries ripen more slowly, allowing the plants to deliver nutrients to the beans for a longer period. The result is a more complex and distinct flavor profile, with a characteristic intensity of aromas.Store in a dry and cool place.
Paloma - Mexico Chabela Decaf Washed Filter 250 g

Manufacturer: PALOMA

Roasting date: 15.07.2026

Specialty-grade whole-bean coffee from Mexico, roasted by the Polish roastery Paloma. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of dried pear and plum, crumb topping, red apple.Origin: MexicoRegion: ChiapasProcessing method: Washed Method of decaffeination: Mountain Water ProcessVariety: Bourbon, Catimor, Garnica, TypicaAltitude: 1100 - 1300 m a.s.l.Cupping score: 83 / 100ABOUT THE REGIONChabela is produced by an exporter based in the Chiapas coffee-growing region of Mexico. Established in 1980, this exporter was the first decaffeinated coffee producer in Latin America, utilizing industry-leading technology for process analysis to achieve the highest quality and bean yield. Their water extraction method achieves over 99% decaffeination. This process was patented in 1987 and received organic certification in 2003. Their business ethics are defined as a strategy where commitments and responsibilities are upheld toward key stakeholders: customers, employees, shareholders, suppliers, creditors, competitors, the local community, and government bodies.ROASTER'S OPINIONWhen you’re already jittery from caffeine but still want more, grab this coffee. It features an unconventional and highly satisfying profile—plum with cinnamon, notes of chocolate-covered cherry, and a finish that reminds you of a freshly baked cookie.V60 RECIPECoffee dose: 19gWater dose: 50g > 300gWater temperature: 93°CGrind size: 8.4 (EK43); 23 clicks (Comandante)Place the filter in the V60 and rinse it under a heavy stream of water to ensure it adheres well to the walls.Grind the coffee, pour it into the V60, and level the grounds.Pour 50g of water, aiming for any dry spots to ensure everything is thoroughly saturated. If the coffee is very fresh (foaming intensely), you can extend the bloom (pre-infusion) to 2 minutes, or perform an additional bloom at 1:00 (pour another 50g and wait until 2:00).At 1:00 (or 2:00), start pouring into the center of the V60 (using circular motions about the size of a small coin). Maintain a flow rate of 6-8g per second (slightly below the second enlarged dot on an Acaia scale) and keep the stream of water just below the point where the flow begins to break.Once you reach 250g, lower the kettle so the spout is about 3 cm above the water surface (you can stop the circular motions now) and finish pouring at 300g.Perform a "shake" by holding the base of the V60 (moving it horizontally and vertically). If the water flows through too quickly, perform a "swirl" instead.Total brew time: 2:30–3:00 (or 3:30–4:00 with an extended/additional bloom).Store in a cold and dry space.

In the cup, you’ll find notes of apple, white wine, white grapes, lemon and cocoa nibs.Origin: BrazilRegion: Cerrado MineiroProcessing method: NaturalVariety: Red CatuaiCupping score: 86 / 100Farm: Glória, Agnaldo Alves & FamilyAltitude: 1105 m a.s.l.In search of new horizons, Geraldo Alves and Marina left their homeland in 1990 with their son Agnaldo to make a fresh start. They had no car or access to electricity, yet with courage and determination, they began growing coffee. Every single tree was planted by hand – as a symbol of effort and faith in the future. Over the years, Café Alves became a family legacy built on quality and tradition, which is now continued by three generations, united by the same passion – coffee.ROASTER'S OPINION"You know, I don't like Brazil, they're all bitter, nutty, probably low qual..." STOP! For people like you, we have our Agnaldo. It has what you don't expect from Brazilian coffees – a good acidity and fruitiness – but it also has what you appreciate in Brazils – balance and a profile that is more familiar. Ideal to start with if you are getting into specialty and alternative brewing after drinking traditional brewed coffee, or just simply as a good, everyday option.Store in a cool and dry place.
