We recommend it primarily for filter brewing methods, where its complex flavor profile and subtle, smooth aftertaste are most memorable.ABOUT THE FARMJhon Alvarado, along with his son Antonio and the whole family, manage sixteen hectares of crops spread across four farms in the Chirripó, Brunca region in southern Costa Rica. This is exactly where lots based on varieties such as Gesha, SL28, or Ethiopia 47 are created, which are now processed in a newly built dry mill launched in 2025.From the first experiments conducted on the Finca La Torre farm to multiple high rankings in the Cup of Excellence competition, the Alvarado family's business is based on conscious development, consistency, and a clearly defined vision of quality. The four-hectare farm, entirely planted with coffee, belongs to Laureano Gómez — a second-generation producer and former teacher who decided to leave his career in education to fully dedicate himself to developing the family farm and producing specialty coffees.Laureano brought back to life an estate that had been neglected for years, building a project based on quality, experimentation, and a conscious approach to production. Together with his brother, he is responsible for both the daily work on the farm and the sale of their coffees. On different plots, he cultivates varieties such as Gesha, Pink Bourbon, and Castillo, constantly developing processing methods to search for even higher quality coffee.This specific lot of Gesha was selected from among the best coffees in the Nariño region during the La Mejor Taza de Nariño competition. It then went to the auction of the best lots, where it was won by Adam Laska — co-owner of the KAFAR roastery — who had previously participated in the competition as a judge.ABOUT THE PROCESSINGThe processing starts with the manual harvesting of fully ripe cherries. Next, the coffee undergoes a four-day anaerobic fermentation in sealed jute bags kept in the cool climate of the Alta Clara region. The next stage is an eight-day anaerobic fermentation in airtight steel tanks, which deepens the sweetness, texture, and complexity of the sensory profile.After fermentation, the coffee is dried for 15–20 days in parabolic dryers, which ensures uniform airflow. The final stage is manual selection and a 15-day stabilization period in jute bags.In the cup, the coffee presents an elegant and refined character with notes of guava, sweet cherry, and muscovado sugar, supported by a creamy texture and a long, sweet finish. This is a limited lot created for the most demanding consumers who brew coffee using filter methods.Store in a dry and cool place.

It is created in cooperation with Gemechu Shonora and local producers, from whom we have been ordering coffee since 2024. We recommend it primarily for filter brewing methods, where its complexity and delicacy are most pronounced.The coffee comes from the Oromia, Guji region in Ethiopia and was produced by Gemechu Shonora in cooperation with around 500 smallholder farmers. The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. The sensory profile frequently features herbal, floral, and spicy notes, along with fresh accents reminiscent of hops or citrus.This lot offers a flavor profile with notes of blueberry, vanilla, and lemongrass, with a distinct, crisp texture. This is one of Ethiopia's most esteemed terroirs—the extreme altitude, cool climate, and slow ripening of the fruit result in a high sugar concentration and extraordinary aromatic precision.The project is led by Tagel Alamayehu—owner of the Olkai export company and coordinator of the Hambela Goro station. His story is personal and deeply rooted in the region. Tagel’s father was one of the coffee pioneers in Guji and built the first washing station in the Bule Hora community. Following family financial struggles, Tagel set a goal to rebuild what was lost—and he realized this plan by creating a modern, quality-focused project based on collaboration with local farmers.Today, Hambela Goro works with 460 small-scale producers, many of whom own only a few hundred coffee trees. Although each batch is a natural composition of many micro-plots, the coffee maintains impressive consistency and a clean profile.ABOUT THE COFFEEThis lot is the 74110 variety—a selection originating from the JARC research program, known for its high sensory quality and clarity in the cup. Combined with the altitude of 2300 m a.s.l., it yields a coffee with a distinct structure, elegant acidity, and multi-layered aromatics.The washed processing was carried out with great precision. Cherries are harvested at peak ripeness, hand-sorted multiple times, and then, after depulping, fermented in water for approximately 48 hours. Drying takes place on African beds for 10–12 days, depending on weather conditions.The cup is dominated by an intense jasmine aroma, which builds lightness and elegance. The flavor features juicy orange, providing freshness and a clear, citric acidity, while the experience is rounded off by ripe, sweet apricot, bringing softness and fruity depth.Store in a cold and dry space.

We placed the green beans in an oak barrel where wine had previously matured, giving the coffee exceptional depth and character.The result is a profile full of sweetness and intense alcoholic notes – in the cup, you will find rum, nougat, and a distinct accent of hazelnut. It is a coffee that combines a Brazilian chocolate-nut base with a clear barrel influence.ABOUT THE PLANTATIONFazenda Matão is one of the more recognizable farms in Brazil, known for producing high-quality specialty coffees. Located in a region favorable for coffee cultivation, it benefits from the ideal climate and altitude, which allow for obtaining beans with a full, sweet profile.On the farm, particular attention is paid to the selection and processing of the beans, which translates into a clean and repeatable profile.
