It is one of the most consistently developed coffee projects in the region — the family micromill Café Rivense, founded in 2005 by Régulo Ureña and Isabel Rojas, and now operated together with their sons: Ricardo, Mario, Esteban, and Luis.The Vista al Chirripó farm sits at elevations reaching up to around 2000 meters above sea level, overlooking Costa Rica’s highest peak, Cerro Chirripó. Lots from this very farm placed 5th in the Cup of Excellence 2019, confirming it as one of the most respected terroirs in the country.The family prioritizes biodiversity, full self-sufficiency, and minimal water usage. The entire production chain — from harvesting and processing to export — is managed by the family themselves, without intermediaries.ABOUT THE COFFEEThis is an exceptional lot of Caturra, processed through anaerobic fermentation and dried in the fruit. The method enhances juicy fruit character and deep sweetness, resulting in a profile full of cherry, dried plum, and praline-like creaminess.The cup is smooth and elegant, with a long, sweet finish — ideal for filter brewing.Cherries are selectively handpicked and then placed in sealed tanks for anaerobic fermentation, where they remain in controlled, oxygen-free conditions. This process gives the coffee deeper color, intensity, and a dessert-like character. The fruit is then naturally dried to concentrate sweetness and aromatics.The result? He sent us samples of several coffees from China, and we chose this one… the most “coffee-like” of them all. It’s a super sweet, dense espresso with spicy notes in the background.We already have one natural from Ethiopia in our espresso lineup. But having just one is like owning a single bicycle. Technically fine… but why limit yourself?This Ethiopia is different from the one in our regular offering because there’s simply more of everything. The acidity might be higher, but the finish is longer and more complex. In the aroma, you’ll find notes of orange and flowers.It makes a seriously good shot on its own, and it also works as a solid base for milk drinks. We highly recommend tasting it side by side with our everyday Ethiopia and seeing the difference for yourself.

We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. At some point his mom’s little SUV simply couldn’t make it any further, so Hellen drove down in her big pickup truck and towed us the rest of the way up.First she fed us, then she showed us the farm and told us its story. After the walk she prepared a cupping where she presented eight of her coffees. A cupping in the kitchen while rice and beans are cooking right next to you? Why not.The coffees were phenomenal. And that Geisha? That’s the coffee that’s been appearing in my dreams ever since I came back from Costa Rica. Lots of tropical fruit, but without the kind of fermentation often associated with coffees from this country. Notes of banana and pineapple, plenty of red, sweet wine, currants, and everything beautifully structured and right where it should be.I’m very happy that we’re also presenting such an exceptional coffee as an espresso. It’s the essence of that trip in a cup: sweetness, tropical fruit, bright acidity supported by deep sweetness. The station works with 2,341 smallholder farmers from 22 nearby hills. Each farmer owns on average around 250 trees. In Burundi, coffee is typically grown on micro-farms, often in small plots next to family homes.The coffee cherries arrive at the station on the day of harvest, where they undergo water flotation sorting, hand selection, and classic washed processing. Fermentation in clean water lasts 10–12 hours, after which the coffee is thoroughly washed and dried on raised beds for 2–3 weeks. Each lot remains fully traceable.The result in the cup is a clean, elegant profile typical of high-altitude Burundi coffees: red currant, vanilla, and black tea.A sweet, clear coffee with a tea-like structure and juicy acidity. Ideal for pour-over brewing methods as well as a light, fruit-forward espresso.Burundi remains one of Africa’s most underrated origins, and Yandaro shows exactly why it is increasingly appearing on the map of the world’s best specialty coffees.

The cherries fermented for about 12 days (around 300 hours) under controlled conditions and were then slowly dried on raised beds for 35 days until reaching 12% moisture.The result? From the very beginning, Bridazul has acted as a link between farmers and roasters. Producers deliver their coffee cherries here, while the Bridazul team handles processing, quality control, and matching coffees with the right buyers without ever taking ownership of the raw product.This allows small farmers to focus on cultivation, while buyers gain access to unique microlots that might otherwise never leave the region.What sets this place apart is its exceptionally advanced approach to fermentation and drying. Years of collecting data, testing temperatures, fermentation times, and slow drying techniques have given Bridazul a far wider range of processing methods than most standard mills in the region. Processes here are designed with a specific flavor profile in mind rather than maximum efficiency.Little Red Riding Hood is an example of this approach. In 2020, Tim Willems from Bridazul noticed that several experimental batches were too small to export individually. Instead of discarding them, they were combined into a cohesive whole. This decision led to the creation of the Bridazul Blends line, and with it, this particular composition.ABOUT THE COFFEEThe coffee comes from several farms around Dipilto and Mozonte, including El Avion, Los Pirineos, and La Bendición, located at elevations between 1400 and 1650 meters above sea level. The blend features the Caturra and Catuai varieties and undergoes Carbonic Maceration fermentation.The cherries ferment briefly in small batches under controlled conditions to highlight fresh, fruit-forward notes. They are then dried on shaded African beds, spread in thin layers to preserve fruit intensity and maintain a clean, elegant cup structure.Bridazul and Little Red Riding Hood demonstrate how technology, experience, and collaboration with local farmers can create a coffee that is not a random blend but a thoughtfully crafted story captured in a cup.
