This is one of the most crucial moments – it determines the cleanliness and character of the future flavor profile. After fermentation, the beans are thoroughly rinsed with clean water, which completely removes the remnants of the pulp and stops the fermentation processes. Thanks to this, the coffee's flavor becomes clearer and free from heavy, fermented notes. The final stage is drying on raised tables (so-called African beds), where the beans dry for about 10–15 days. They are regularly turned to ensure even moisture evaporation and to avoid defects.The result of the entire process is a coffee of exceptional clarity – one in which you can clearly taste the origin, variety, and growing conditions.
