Our visit to his place was entirely spontaneous.In January 2025, while traveling through Guji, our local partner Gemechu mentioned that he wanted to show us a small coffee drying plot behind the house of one of the nearby smallholders. It was our last day in this part of Ethiopia, so we were happy to stop by Gelo’s farm. Freshly harvested coffee, only a few days old, was covered with a tarpaulin to protect the cherries from the intense sun. This is a very good practice, although a distinct, intense fermentation aroma was clearly noticeable beneath the cover. Curious about the outcome, we took a sample of coffee that had previously been dried in the same way. Two days later, at the cupping table, we tasted a juicy, fruity, and very clean coffee, without any “wild” notes that can sometimes appear as a result of extended processing.Mr. Gelo owns just 5 hectares of coffee fields, and his annual production amounts to only… about 20 bags of export-ready coffee.A true gem from deep within Guji.ABOUT COFFEE PROCESSING ON THE FARMA single, regionally traditional Wolega variety, hand-picked and delivered to a small drying area with raised beds. Dried as a natural, in whole cherry, covered daily with a tarpaulin during periods of the most intense sunlight. In 2019, our export partners Forest Coffee - founded by the Bayter family from El Vergel - and local coffee grower Emmanuel joined forces to establish the Black Condor Project, providing support to farmers in Gaitania affected by guerrilla warfare. The projects conducts regular workshops with producers to emphasise quality and cover processes such as fermentation, drying, and cupping of their own coffees. Their coffee is processed at a mill in Gaitania, which now serves over 15 villages across Gaitania.THE PROCESSThe process begins with embracing mucilage for 24 hours. The beans then rest on a drying patio, fostering a harmonious profile. After a 15 to 25-day drying period, they undergo a stabilisation process before proceeding to the milling process, which results in a consistent profile.ROASTERS OPINIONIn 2019, the Black Condor Project was established to support farmers affected by the violence that had swept Colombia. Across 15 villages, assistance with growing, processing, and quality control has helped lift coffee quality. This washed lot shows everything they have achieved.
