After many years of experience with commercial coffee and observing declining market prices, they decided to shift their focus toward specialty coffee in search of stability, higher quality, and greater independence.Finca Bethania combines traditional farming practices with a modern approach to coffee cultivation and processing. The plantation operates according to sustainable development principles. Water used in production processes is treated and returned to the rivers, while the natural forest, local ecosystem, and wildlife are carefully protected. Since 2014, the farm has held Rainforest Alliance certification, confirming its commitment to environmental conservation.ABOUT THE COFFEEThe Maracaturra variety, known for its large beans and intense character, is grown on a small, designated section of the plantation. This is the parcel from which this nano-lot originates. Ana and Martha chose to process it using the natural anaerobic method to highlight the fruitiness and complexity of the flavor profile. The cherries ferment in airtight containers for 3–4 days and then dry for approximately 15 days on African beds at the Cafetos de Segovia mill in Ocotal, which is also owned by the Albir family.

It is one of the few areas in the region that is home to protected forests, which host a diverse range of flora and fauna typical of the area. Moreover, there are several water sources in the region that supply much of the nearby city. The lush, natural ecosystem creates excellent conditions for growing coffee trees while also contributing to the fertility and stability of the soil in these lands.This particular lot is a blend of two botanical varieties from several small producers, who cultivate and process coffee on small, multi-hectare plantations.ABOUT COFFEE PROCESSING ON THE FARMThe Caturra and Pache varieties are hand-picked and processed at small, producer-owned stations. The beans are separated from the cherries using small, often manual depulpers and then fermented in tanks for about 36 hours. After washing, the beans are dried in specially built wooden structures, covered with tarps to ensure a more controlled process, without direct sunlight exposure.ROASTER'S OPINIONI first roasted El Diamante around 2016, alongside several other washed microlots from the highlands of this northern part of the country. This doesn't mean they are "small," but rather that they grow coffee on small plots of land (usually less than 2 hectares) and do not process it themselves. The harvested coffee cherries are sent to cooperatives that handle further processing at local washing stations. This is where the cherries are turned into "washed coffee."In this case, the coffee cherries are collected by the Inoi Farmers Cooperative Society, and their processing takes place at the Kaguyu factory, managed by Wilson Wanjohi. The coffee is processed using the washed method. Once delivered, the cherries are pulped to extract the seeds, fermented overnight, then washed, soaked, and dried on raised tables. Interestingly, for a long time, local farmers were not allowed to grow coffee legally. It wasn't until the 1930s that they were permitted to produce it for themselves, which today forms the foundation of Kenya's specialty coffee scene and remains a major contribution to the country's budget.

The plantation belongs to the Los Naranjos group, led by Sigfredo Corado, a retired agronomy professor from the National School of Agriculture. It is also part of the Renacer Program – a field school for coffee producers in the region, aimed at imparting knowledge on better crop management practices.Sigfredo, together with a team of six technicians, runs the field school. The program supports small and medium-sized producers from the area, offering training on best agricultural practices that promote soil and land regeneration while improving yields and coffee quality. The school operates at Finca Noruega, where classes are held twice a month. The curriculum focuses on a soil health program based on the principles of "right source, right dose, right place, and right time."Since 2021, the program has involved 60 participants who work on experimental plots. Much like in Kenya, the volcanic soil here is extremely rich in minerals and nutrients, which translates directly into a complex and sweet cup profile. Bourbon is produced here by nearly 500 smallholder farmers living around the washing station. Nearby lies Nyungwe National Park, known for its pristine forests and a significant protected population of gorillas. The water used during processing comes from a natural spring.Cyiya supports its local community in several ways, including providing training for producers and distributing coffee seedlings and shade trees free of charge. At the same time, it promotes environmental protection through conservation programs and wastewater treatment initiatives.ABOUT THE COFFEE PROCESSING AT THE FARMThe Bourbon variety is hand-picked and undergoes an initial selection before being delivered to the mill. The next stage involves soaking the cherries in water to separate the under-ripe ones, which float to the surface instead of sinking. After the beans are separated from the fruit, they undergo fermentation in tanks for 18 hours, followed by washing and drying on raised beds for approximately two weeks.ROASTER'S OPINIONEvery year we get excited about fresh Rwandan coffees and pack these beautiful beans into jars. It’s like a lemonade-style, fruity compote where all the layers come together in such perfect synergy that we end up gulping it down by the liters.
