The Cabrera family has been connected to this land since the early 20th century, and coffee cultivation began in the 1940s. Eduardo Cabrera, the current owner, invested in building his own wet mill on the farm, which allowed him to take full control over processing quality. The processing method is Sleeping Bag Natural – cherries are sorted by ripeness and dried outdoors in sealed bags that slow down moisture loss and concentrate flavor without the risk of over-fermentation. The coffee is decaffeinated using the sugarcane ethyl acetate method – not chemically, but using a natural solvent derived from sugarcane. The green beans enter a steam chamber, are then soaked in spring water, and spend 8 hours in direct contact with ethyl acetate, which dissolves the caffeine while leaving the rest untouched.
