Alongside her mother, Vanessa is leading all agricultural practices at the farm. Together, they have invested heavily in regenerative technologies. They have focused on reforestation at the estate and conserving water, bringing back the biodiversity that would have existed before the land was intensively farmed. During cultivation, all inputs with negative impact are decreased to a minimum and soil and plant health are actively restored.ABOUT THE PROCESSThis lot underwent fermentation for 40 hours: the whole cherries are sorted and cleaned, before being placed in a sealed anaerobic environment. The fermented cherries were then dried on patios with the whole outside cherry intact. The anaerobic process is a great match for the terroir of Brazil, bringing superb depth to the profile.ROASTER'S NOTEVanessa Moreno is inspired by sustainability and connection to the land: we are excited to share her coffee for the first time.
