High altitude, fertile soils, and regular rainfall create conditions for which Yirgacheffe is famous for exceptionally aromatic coffees with a floral and fruity character.Only ripe cherries enter the processing stage, which, after selection, are dried whole on raised African beds for 12–15 days. During this time, they are regularly turned and protected from intense sun, rain, and night moisture. Slow and controlled drying allows the beans to absorb sugars from the pulp, building the intense sweetness and characteristic floral notes of the finest Ethiopian natural process coffees. After drying, the coffee is hulled, sorted, and hand-picked before packaging.ROASTER'S OPINIONFor years, Yirgacheffe has been famous for some of the most sought-after Ethiopian microlots, and Banko Gotiti is among the most well-known stations in the region. This coffee stands out with an unusual combination of features from two different processes – intense floral notes and citrus acidity typical of washed coffees, alongside clear, sweet strawberry associated with natural process coffees.Intense flowers dominate the aroma, accompanied by delicate citrus and sweet berries. In flavor, floral notes combine with a distinct strawberry note, while refreshing citrus acidity brings lightness to the whole profile. The coffee has a medium body, high sweetness, and a long, pleasant aftertaste where flowers and citrus appear once again.
