The farmers manage their land under the shade of forest and fruit trees, taking care of biodiversity and soil fertility. Ripe cherries are hand-picked and then subjected to classic washed processing. After fermentation and washing, the coffee is dried for about twelve days under carefully controlled humidity and sun exposure.Behind the project is Cafetos de Segovia, an organization that has for years been helping local producers reach the specialty market directly. It places great emphasis on supply chain transparency, long-term cooperation with farmers, and fair compensation for high quality.
