The farm covers an area of 200 hectares, of which 45 hectares are dedicated to coffee cultivation – the remainder forms a natural protected area. The Cabrera family has been connected to this land since the early 20th century, and coffee cultivation began in the 1940s. Eduardo Cabrera, the current owner, invested in building his own wet mill on the farm, which allowed him to take full control over processing quality. The green beans enter a steam chamber, are then soaked in spring water, and spend 8 hours in direct contact with ethyl acetate, which dissolves the caffeine while leaving the rest untouched.
