Arabica, canephora, liberica. But here we have to throw our hands up and say – it's a matter of debate. Excelsa was discovered in 1903 and since then was considered a separate species. In 2006, its official classification was changed to a variety of liberica. However, many farmers and researchers dispute this decision, pointing to many characteristics unique to excelsa.We won't resolve this dispute. However, we can say with great certainty that, like liberica, excelsa has a unique flavor profile not found in other species. Sage, licorice, exceptionally high sweetness. You can't miss it. Very to the point – the name Si Unyil Manis translates to "the sweet little one".ABOUT THE CULTIVATIONIn coffee, you often hear claims about sustainable and biodiverse farming. Often these are empty words. Meanwhile, excelsa is perfect for precisely these conditions. It gladly grows in the shade of other trees, among many plant species. Si Unyil Manis is cultivated in an equatorial forest, alongside banana trees, tobacco, and tall shade trees. Compared to the nearby oil palm plantations, this is an incredibly vibrant ecosystem.ABOUT THE PROCESSINGThe producer of this coffee, Rainaldi, specializes in excelsa like few others. For years, he has been searching for processing methods that allow full expression of this species' (variety's?) flavor notes. In this case, the full name of the process is "anaerobic thermo soaked natural". In practice, this means that after harvesting, the fruits were given a warm bath, from which they went into fermentation tanks. Further processing is classic natural drying. The warm bath helps eliminate some of the naturally occurring bacteria and fermenting yeast. This results in a more stable and repeatable anaerobic process.ROASTER'S OPINIONA mystery coffee. Is this another – now the fourth species of coffee plant in our offer? Maybe yes, maybe no. But we guarantee that while drinking it, you won't be puzzling over it, because the coffee is spectacular even without mysteries.We were looking for a promotional slogan for this coffee. Once every four years, the eruption of the nearby Merapi volcano covers the entire region in volcanic ash, which is incredibly fertile and promotes the development of sweetness and spicy characteristics in the coffee.ABOUT THE PROCESSINGExperiments with Canephora are particularly important to them, which naturally caught the attention of the Brothers (fine robusta neophytes). This specific lot underwent their signature process – quadruple anaerobic fermentation. The fruits spend five days in each of four consecutive tanks, being cleaned of fermentation byproducts in between. This is Vins and Bedjo's proven method to "clean up" robusta, giving it a clear character and a great, mild profile.ABOUT THE SPECIESWe are glad that you are exploring coffea canephora, often called robusta, together with us. For years, this species was mainly associated with cheap blends, but well-cultivated canephora can be intense, sweet, creamy, and surprisingly complex.That is precisely why it is appearing in our selection — to show that the world of coffee is broader than arabica alone.However, it is worth brewing it a bit differently. Canephora is more intense and extractable, which is why we recommend lower temperatures: 86–89°C (it is best to start at 88°C). Water with lower mineralization — around 70 ppm — also works well. You can simply mix your water with distilled water in a 1:1 ratio or use low-mineral water, such as Żywiec Zdrój.Do not be surprised if it tastes different from the coffee you know. According to World Coffee Research and Perfect Daily Grind, it is an absolute classic and a benchmark against which other modern botanical varieties are evaluated.What is worth knowing about it?Compact growth: Caturra possesses a dwarfism gene. The shrubs are short and stocky, which allows farmers to plant them more densely and makes harvesting the cherries much easier.A demanding patient: The price for high yield is poor health. The station's facilities include as many as 12 fermentation tanks, 3 soaking tanks, over 300 drying beds, and 4 specialized tables for quality sorting.Harvesting in this region usually lasts from April to June, but this coffee's journey to your cup only begins then. Due to the steep slope of the terrain, special attention is paid to soil protection. Cover vegetation is allowed to grow freely to prevent erosion. Crops are also monitored for pests and diseases, which are managed upon detection. As he says himself, he "inherited" the profession of a producer from his father. He completed courses in coffee production at the National Learning Service (SENA), and nearly ten years ago he established his own plantation. In addition to Caturra, Don Lisandro also cultivates Gesha and Pink Bourbon varieties.Don Lisandro owns a five-hectare farm, 4.5 hectares of which are dedicated to coffee crops. The plantation is located on soil typical of this region, which is a combination of volcanic and sandy-loam substrate.Only deep red, ripe cherries are harvested. In the afternoon, the pulp is removed from them, and they are then sorted using a zaranda – a type of screen used to separate impurities from the coffee. It all began at the beginning of the 20th century, when around 1908 the Dutch colonial authorities brought Arabica seedlings to the Gayo highlands.Today, Gayo coffee is grown mainly in three regions: Central Aceh, Bener Meriah, and Gayo Lues. This place has ideal growing conditions - fertile volcanic soils, hilly terrain, a cool climate, and regular rainfall. Thanks to this, the coffee from there is of truly high quality.After colonial times, cultivation was taken over by local, small-scale farmers who continue this tradition to this day, often using natural, sustainable methods and shade-grown cultivation.For the inhabitants of Gayo, coffee is more than just a product - it is the foundation of life. It supports virtually every family and is strongly tied to their culture and identity.After harvesting, the fresh coffee cherries are processed immediately. The first step is sorting using the flotation method (known as "rimbang") - the cherries are thrown into water, which causes the ripe, heavier (meaning good) ones to sink, while the immature or damaged ones float to the surface and are discarded. This is a coffee with a fruity character, pleasant sweetness, and an interesting, slightly spicy finish. Maracaturra shows its characteristic intensity here—it is juicy, aromatic, and has significantly more to say than classic coffee profiles from the region.This profile is shaped by both the variety and the processing method. Large Maracaturra beans harvested from a small portion of Finca Bethania underwent anaerobic fermentation for 3–4 days and were then dried as a natural on African beds. This process helps bring out the fruitiness, emphasize the sweetness, and give the coffee a fuller structure.Finca Bethania is a farm owned by the Albir family, who has been involved with coffee for generations but is not afraid to step outside traditional boundaries. Martha and Ana combine experience with experimentation—they care about quality, the environment, and every stage of production. From water recycling to protecting the natural forest, they demonstrate that specialty coffee can go hand in hand with responsible farm management.We chose this coffee because it combines character, an interesting story, and the producers' courage to search for new solutions.
