The coffee cherries are submerged in water to discard light, unripe, or damaged fruits that float to the surface. Next, an additional manual quality control is conducted.The subsequent stage is depulping, which is the separation of the skin and most of the pulp from the bean. After this process, the beans are still covered with a sticky layer of mucilage – natural sugars and pectins.Then the coffee goes into fermentation tanks. This is one of the most important moments of the entire processing. Natural enzymes break down the remnants of the pulp, and producers very precisely control the fermentation time to maintain the cleanliness of the profile and avoid excessive, alcoholic notes. It is a light coffee on the palate, with a tea-like structure and delicate intensity.ABOUT THE PROCESSINGThe exceptional character of this batch is greatly influenced by the Extended Fermentation Fully Washed processing method. The process begins with the manual harvesting of only fully ripe fruits. Next, the coffee cherries go to a depulper, which separates the skin and most of the pulp from the beans. At this stage, the beans are still covered with a layer of mucilage.The next step is extended fermentation. In contrast to classic washed processing, where fermentation usually lasts from a dozen to several dozen hours, here the process is intentionally prolonged and carefully controlled. Microorganisms naturally occurring on the surface of the fruit break down the remaining pulp, while creating aromatic compounds responsible for a greater complexity of flavor. It is this stage that allows for the extraction of additional fruitiness and juiciness while maintaining the cleanliness characteristic of washed processing.After fermentation is complete, the beans are thoroughly rinsed with clean water to remove any remaining pulp. Then they go to drying tables, where they dry slowly until optimal moisture content is achieved. Fertile, volcanic soils, a cool climate, and shade-grown cultivation create ideal conditions for the fruit to ripen, while sustainable farming methods preserve the natural richness of this unique terroir.ABOUT THE PROCESSINGRight at the harvesting stage, only fully ripe, red cherries are selected. They then undergo traditional sorting using the floating method, during which they are submerged in water. The highest-density cherries sink to the bottom, while immature or damaged ones float to the surface and are discarded. This ensures that only the finest raw material moves on to further processing.The next stage is anaerobic fermentation. Whole cherries are placed in tightly sealed tanks, where they ferment without oxygen for a controlled period. Under these conditions, complex aromatic compounds develop, giving the coffee exceptional depth, intense fruitiness, and distinctive, slightly winey notes.After fermentation is complete, the whole cherries are spread out for drying. The pulp remains on the beans throughout this process, gradually transferring sugars and aromatic compounds to them. Slow, carefully monitored drying results in a richer body, enhanced sweetness, and a distinct structure in the brew.Only after reaching the proper moisture level do the dried cherries go to the hulling machine, which removes the dried skin and pulp. The green coffee beans then undergo thorough sorting and quality control before being prepared for export.The result of this demanding process is an incredibly expressive cup. Sofie from Sucafina recommended that we contact Alfonso from Café Monteverde and his Timuyacu farm, as his philosophy and values in the pursuit of quality, caring for his people, and protecting the environment aligned with NOMAD values.Alfonso sent us samples of several of his lots, including this Washed Bourbon from Colasay Washed was a perfect fit for what we were looking for. A sweet, easy-drinking coffee, slightly fruity but not overly so, ideal for one of our house coffees.ABOUT THE FARMTimbuyacu comes from the Quechua words Timbu (boiling) and Yacu (water), referring to a natural water spring located within the farm, where the water bubbled up as if it were boiling. This farm has a long family history, from Alfonso's grandmother, Eleodora Mori de Ibérico, to the present day, where Alfonso is in charge of the care, sale, and export of the coffee. The farm is divided into several plots: Vista Hermosa, El Mirador, Pirruro, Nuevo México, Alto Timbuyacu, Jergón, El Shapingo, El Pante, La Cabaña, Quishtucto, Pileta, and Las Peñas. This particular lot comes from the El Pante plot, named for the predominant presence of native Pante trees distributed throughout it.The farm works with a regenerative approach, recovering degraded soils through the use of organic matter, agroforestry systems, and comprehensive management from germination to post-harvest. This is something we greatly value at NOMAD.In short, we are grateful to have met and started this relationship with Timbuyacu and hope to have their coffees from now on. This commercial relationship has been directly facilitated by Sucafina's help in importing and financing the lot.ABOUT THE PROCESSThe coffee is selectively hand-picked and pulped in a drum pulper. After pulping, it is fermented for 18 to 24 hours and washed with clean water. The resulting parchment is placed on drying beds or patios where it is regularly turned to ensure even drying.The drying process takes approximately 15 to 20 days. Once dry and at the required moisture level, the parchment is stored on the farm for approximately 60 days before being transported to the dry mill for threshing and export.Store in a cold and dry space.

Dark roasted, designed to be brewed in an espresso machine, café, frenchpress or pour-over methods of brewing or brewing in a cup. Profile with low acidity and higher bitterness.This is the most budget-friendly coffee in Heresy's portfolio and perhaps the most heretical! Pastor is a blend of coffees from the previous season, which proves that there is nothing wrong with transparently communicating the harvest date! We roast this coffee darker, though in a way that makes it suitable for a variety of brewing methods. It will work especially well in an espresso machine or a mokka pot, and for fans of lower acidity, higher bitterness and sweet chocolate and caramel notes, also in filter methods. That's why we call it an all-purpose blend. Pastor doesn't offer coffees eternal life, but gives a second one to those that deserve it!WHAT A HERESYAlmost every roaster has some coffee left over from the previous crop when new, fresher coffee from the last harvest comes in. These beans are often still good, especially if their quality was high from the beginning, although it usually happens that they lose some intensity and sometimes there are notes associated with some woody impression which appear. There are different ideas about how to use them. Quite a few roasters sell them at regular price, without disclosing the harvest date, some add them to cheaper blends, others try to hide the flavor with darker roasting or aromatization. To put the emphasis on fresh, up-to-date crops in our offerings, we always include their dates in the description of our lots. We dream of making this an industry standard! So that the consumer can more consciously judge quality and freshness against price. Meanwhile, there is nothing wrong with "past crops" themselves, if we say so directly and price them accordingly lower. It's a good coffee, and by using beans from previous harvests, it also has a much lower price, because we sell it 'at cost value'! It's also our way of 'less waste', because some great beans were standing in our warehouse, with no idea what to do with them. And that's how PASTor came into being.PACKAGINGThe coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! It is located at the foothills of the famous Mount Kenya, in the western part of Kirinyaga, the most popular region in terms of quality. The soils here are volcanic and at the same time the most fertile in the entire country, which is why coffees from this area are so highly valued by roasters all over the world.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMSL28, SL34, Ruiru, and Batian varieties, hand-picked by 650 small producers from the area. After being delivered to the station, they undergo an initial, manual selection, during which unripe and insect-damaged cherries are discarded. After the seed is separated from the fruit, the coffee ferments overnight in tanks, then it is washed and sorted into four quality categories. Drying takes from 10 to 20 days, depending on the weather.ROASTER'S OPINIONThis is our last Kenya of the passing season! Every year, May and June are a time of waiting for the new harvest – in the meantime, here you have a cup that continuously presents excellent quality.
