El Diviso sits at an elevation of 1,780–1,900 m a.s.l., while Las Flores is located at 1,700–1,790 m a.s.l. Both farms focus on experimental processing methods and cultivate a wide range of botanical varieties.This lot is a blend of the Tabi and Yellow Colombia varieties. The coffee undergoes double fermentation: first an aerobic stage, followed by anaerobic submerged fermentation aimed at enhancing stone-fruit notes. After fermentation, the coffee is subjected to a “thermal shock” using hot and cold water to minimize aroma loss and preserve the desired sensory profile. Drying begins naturally under cover, after which the coffee is finished mechanically in a silo. It then rests for at least 10 days before final milling.Coffees from Las Flores and El Diviso regularly appear in winning routines at Barista Championships—on the World Barista Championship stage (including the 2025 World Barista Champion) as well as in the Polish Barista Championship—further confirming their exceptional potential.ROASTER’S NOTENestor Lasso and Johan Vergara are pioneers of the new wave of Colombian coffee producers. Both farms (El Diviso and Las Flores) are truly impressive, and although I have visited them several times, each visit brought new solutions and innovations. When the result of their collaboration—Carambolo Estate—appeared on our cupping table, it was immediately clear that these beans would become this year’s filter coffee of December. Their marriage not only marked the beginning of their life together but also laid the foundation for what is now known as FINCA LA ESPERANZA, located in the municipality of Zentla in the state of Veracruz. In the early years, they focused on growing coffee and sugar cane, as these were traditional crops in the region.In 1970, the Rincón brothers purchased the land that today serves as the main operational center and coffee processing site. This acquisition expanded their coffee production to a total of 300 hectares owned by the Rincón family. However, in 1985, the brothers decided to divide the jointly purchased land, opting for separate ventures to support both business efficiency and family harmony.What Emmanuel did was a radical shift in the way coffee was processed—he experimented with various fermentation methods, evaluated variables, and adapted processes according to the resources available at the time. He also conducted tests and exchanged knowledge with other producers, both from Mexico and from other coffee-producing countries with greater experience in controlled and extended fermentations.In 2018, Emmanuel met Andreas from Exportadora de Café California, who provided support and guidance in improving the quality of the coffee grown on the farm. Together they implemented environmentally friendly practices, using resources sustainably to prevent soil degradation and environmental pollution.By 2019, Emmanuel began processing coffee for national competitions, aiming to achieve clarity, complexity, cleanliness, and a harmonious balance of body, acidity, and sweetness in the final cup.ROASTER’S NOTEWe’ve been waiting a long time for a Mexican coffee to return to our offering—and it’s finally here! It’s not easy to find beans that match our taste preferences in a country roughly the size of the UK or Romania, but with a population density closer to that of the Netherlands or Poland. Uganda is relatively densely populated, and agriculture drives the economy—but most farmers grow Robusta.But rest assured, we managed to find a fruity bomb, a true gem.Norman’s farm is located at the foot of Mount Elgon in Uganda, sourcing cherries from the regions of Sironko, Mbale, Bulambuli, and Kapchorwa. The Coffee Yard is a large reception and drying center for coffee cherries. With almost 20 years of experience in the industry, Norman has specialized in natural-process coffees since 2018, continually refining his processing methods to achieve ideal flavor profiles.The processing steps include:• Selecting and washing cherries to remove defects.• Initial drying on raised beds.• Additional sorting by color and moisture content.• Fermentation in open tanks, which contributes to the coffee’s unique flavor notes.• Drying for about 21 days until moisture drops below 12%.After an additional week, the beans are hulled, hand-sorted and optically sorted, then prepared for export.ROASTER’S NOTEThis coffee truly surprised me! Another lesson showing that it’s worth exploring unknown paths, staying curious, and continuing to search.
