This exceptional variety most likely descends from Ethiopian coffee cultivars, placing it among the relatives of the legendary Geisha. Pink Bourbon is known for its larger cherries, ability to thrive at higher altitudes, and — importantly for farmers — greater resistance to disease than traditional Bourbons. Its genetic richness translates into an astounding flavor potential, admired by both coffee professionals and enthusiasts alike.Alonso approaches cultivation with full awareness and dedication — he wants everyone who drinks his coffee to understand how much time and care he invests in it. During harvest, he works with hired pickers who carefully select only fully ripe cherries. The natural processing method involves drying the whole cherries on raised platforms called marquesinas.
